Blueberry Cake Cookies
Last week I received a phone call from friends that were on their way to the Gloucester area, for the day and were planning to stop by for a quick visit. Excited for their arrival, I went straight to the panty to see what sweet confection I had to serve with Iced coffee. Remembering how fast and delicious the PB&J cookies recipe using a boxed cake mix is, ( PB&J a recipe I posted a few months back using boxed cake mix), I decide to get creative with a boxed white cake mix and a small container of fresh blueberries I had on hand. With fingers crossed and company expected to walk through he door in a few hours, I successfully created this yummy Blueberry Cake Cookie in less then and hour. I’m looking forward to trying it with fresh raspberries next time!

Blueberry Cake Cookies
Ingredients
1 box Pillsbury Moist Supreme Classic White Cake Mix
2 eggs
⅓ cup vegetable oil
1 teaspoon pure vanilla extract
1 teaspoon lemon extract
1 ½ cup fresh blueberries
1 tablespoon fresh lemon zest
¼ super fine sugar
¼ cup confectioners sugar
Step-by-Step
1 combine cake mix, eggs, oil, extracts, and lemon zest in bowl of stand mixer fitted with paddle attachment; mix on medium speed until all ingredients are evenly incorporated
2 remove paddle attachment and bowl from mixer stand; add and fold blueberries into batter using rubber spatula
3 using 1 inch cookie scoop; fix scant scoops of batter 1 1/2 inches apart on parchment lined cookie sheet; lightly sprinkle each with superfine sugar
4 bake 12-15 minutes in preheated 350 degree oven
5 cool 15 minutes; dust with confectioners sugar; serve
