Cucumber & Vidalia Onion Salad
Our friends Craig and Hannah Kimberley hosted a 4th of July southern style BBQ. The Kimberley’s both have roots in the south, that often shine through in their style of cooking. Hannah, AKA “Miss Hannah” always finds a way to incorporate yields from her garden with her roots from the south in delicious side dishes perfectly paired with husband Craig’s Killer Southern Style BBQ. Craig Kimberley, may be publically know as a master behind the camera, with cutting edge video masterpieces, shown on the OutDoor Channel and here on GMG, but truth is that he is a master behind the camera and the grill! Last week Miss Hannah treated guests with this tasty southern summer Cucumber & Vidalia Onion Salad, while husband Craig spoiled guests with tender cuts of grilled beef and some of the best smoked ribs I have ever tasted!

Cucumber & Vidalia Onion Salad
Ingredients
1 1/2 cup white vinegar
1 cup sugar
5 allspice berries
2 cups cucumber; sliced thin
1/2 large Sweet Vidalia Onion; sliced thin
Step-by-Step
1 place thinly sliced cucumber and onion pieces in medium size mixing bowl; toss
2 combine vinegar sugar and allspice berries in small sauce pan; bring to boil; stir until sugar is completely dissolved
3 pour hot mixture over cucumber and onion; mix well; cool on counter 20 minutes; fix plastic wrap directly on the top surface of mixture to keep cucumbers and onions completely submerged; refrigerate 1 hour before serving
Note~will keep 5 days refrigerated in airtight container; recipe can easily be doubled or tripled

What a great combo here -Wow the Vidalia onion – even in Warner Robbins AFB Georgia these go quick…I had a whole sack in my barracks room 1980-1982 (5th CMBTCG) Gators. My commander and 1st Sgt used to rib me about them…Had the produce manager call when the tractor trailer came in at Commissary because sell out quick. Very Nice thanks Dave & Kim:-) 🙂
