Let me tell you, I am one lucky girl. I get to do fun things and cook with great people and chefs that not everyone gets to do–and believe me, I appreciate the opportunities!

A little while back, I got the chance to tour the Steve Connolly Seafood facility in Boston–what an impressive operation–and even better than that the chefs cooked three delicious recipes that they shared with me to give to you right now. The show with these recipes will air again this Friday at 4:30 and then again Sunday at 11:30 am on Cape Ann TV and then next week, another show with a new recipe and more of our tour.

These recipes are easy to make at home using readily available ingredients and fairly simple techniques. Trust me– you want to make these recipes and they will be a HUGE hit with your friends and family! I took lots of photos on our visit so that you can see how the finished dishes should look.

ASIAN LOBSTER AND MELON SALAD
Lobster Meat, fresh
Diced ¾ inch……………………….1 cup
Honeydew Melon, ripe
Diced ¾ inch……………………….1/2 cup
Cantaloupe, ripe
Diced ¾ inch…………………..…..1/2 cup
Mango, ripe
Diced ¾ inch…………………..…..1/2 cup
Ginger , minced………………..………1 tsp
Orange zest, fine julienne………..……… 1 TBSP
Cilantro leaves…………………..……..1 TBSP
Mache or Baby Spinach…………….3 oz.
Dressing:
Orange Juice…………………………1 oz.
Rice wine vinegar…………………..1 TBSP.
Canola or Peanut oil……………….1/2 cup
Sriracha sauce………………………..1/2 tsp.
Sea salt and black pepper…………to taste
For dressing:
Place orange juice, vinegar, Sriracha sauce, salt and pepper in a stainless steel bowl. With a wisk, blend in the oil until emulsified.
For the salad:
Toss the Mache or Spinach leaves with a little dressing and place on a platter. Put Lobster, Fruit, Ginger, Orange zest, and Cilantro in a stainless steel bowl. Add rest of the dressing, and toss until coated. Put the Lobster Salad over the Greens, and garnish with edible flowers. Serves 2

And here is another gorgeous and easy recipe–you can use halibut as Chef Carlos did or he said you can use any other firm fleshed white fish–just watch the cooking time if it is on the thinner side.
Nova Scotia Halibut with Roasted Corn and Tomato Salsa
2 Halibut portions skls/bnls…………………….2 each, 9 oz.
Olive oil………………………………………………….2 TBSP
For Chive sauce:
Unsalted Butter…………….….4 TBSP
Shallots, minced……………….2 TBSP
White Wine, dry…..……….….2 TBSP
Chives, chopped……………….2 TBSP
Sea salt and Black Pepper….to taste
Salsa
Corn, shucked …………………………….…….2 ears
Olive Oil……………………………………………2 tsp
Plum Tomatoes, peeled & seeded………..2
Chives, chopped……………………………..…2 TBSP
Sea salt and Black pepper…………………..to taste
For the Salsa:
Slice off the corn from the cobs and break up the kernels.
Dice tomato into ½ inch pieces and put in stainless steel bowl with chives.
Heat olive oil in a non-stick pan until hot, and add corn, tossing and pan
roast until lightly caramelized, and add to bowl with tomatoes.
Season with salt and pepper and mix together. Reserve.
Wipe pan clean for next step.
For the Halibut: Preheat oven to 450 degrees F.
Season Halibut with salt and pepper. Add oil to pan until hot and place Halibut in pan flesh side down and pan sear until nicely browned. With a non stick spatula, turn Halibut over gently onto skin side, cover fish with foil, place pan in oven, turning temperature down to 350 degrees and cook 10 minutes until just done. Do not overcook.Remove fish to warm plate and cover with foil. Return pan to stovetop, add 2 TBSP butter and shallots and sauté until transparent. Add wine and reduce by half, add remaining butter, and swirl in the pan. Add chives at end, correct seasoning and set pan aside off the burner.
Plating:
Place large spoonful of Corn Salsa to one side of plate. Place Halibut on plate leaning on the salsa, spoon butter sauce over the fish, and garnish with fresh chives. Serves 2
UGHHHHHHHH!!!!!! Wasn’t it just last year when they said they wouldn’t sell lobsters any more because they considered it inhumane to hold them in crates?

Hey Joey, thanks for thinking of us. I have included our mission statement below, which is about as close to a press release as we get. The seventeenth annual race begins Sunday morning the 19th on the Rogers Street hill in front of Gorton’s. Practice runs at 11:00 and the heats at High Noon. This year we have 37 cars registered for the "Thrill of the Hill", I know competition will be keen. We are expecting Mayor Kirk, Senator Tarr, and Rep. Ferrante to help us kick off the race, so bring your camera and come on down for one of the great family events of the Gloucester year.

Getting to the Race
Route 128 North to first rotary. Take second exit off the rotary. Follow 128 extension to lights. Take left onto Eastern Ave/127. Follow 1/2 mile to Shaw™s Plaza and make immediate right onto Barn Lane. At bottom of hill take a left onto Thatcher Road and follow for 1/2 mile. Good Harbor entrance is on the right.
Parking
Parking for the race is available in the parking lot of Good Harbor Beach. Please do not park on Nautilus Road as this will impede the finish area for the race.
Course Description
The starting line is at the intersection of Atlantic Road and Nautilus Road. Continue on Atlantic Road for approximately 1.5 miles and make a right onto Grapevine Road. Follow Grapevine Road till the intersection of Grapevine Road and Eastern Point Road and make a left. Cross over Eastern Point Road immediately and follow past Niles Beach and bear to the right, through the stone gateway and onto Eastern Point Boulevard. Run along the right side of the road and bear to the right at the “One Way” sign and make a left onto Lake Avenue. This will bring you past Niles Pond and back onto Eastern Point Boulevard. Make a right onto Bemo Avenue then a left onto St. Louis Avenue. Then make a right onto Farrington Avenue and veer to the left at the top of the hill onto Atlantic Avenue. Follow back to the finish line on Nautilus Road.

Miscellaneous Details
The 2009 race served as the USATF New England Grand Prix 10K Championship race. Prize structure will be determined and once determined the site will be updated.
The race begins at the corner of Nautilus Road and Atlantic Avenue. The start is approximately 600 meters away from the registration area. THERE IS A SHORT WALK ACROSS THE BEACH TO GET TO THE STARTING AREA.
Catered breakfast will be provided for all registered runners and extra tickets are available for $5/ticket.
The Lone Gull Charitable Trust
The Lone Gull Charitable Trust was created and shall be operated to raise funds to donate to 501(c)(3) organizations which are dedicated to: research of causes, treatment and cures of cancer; administering to the needs of cancer victims; or the needs of the families of cancer victims.

GLOUCESTER STAGE YOUTH ACTING WORKSHOPS
ACCEPTING STUDENTS FOR
THE FALL SESSION
Gloucester Stage proudly announces the Fall Session of Youth Acting Workshops for children ages 6 to 18 to discover their creative potential. The six week Youth Acting Workshop Fall Session taught by award winning actress Heidi Dallin will be held Saturdays beginning October 2. Each class is two hours per week and the students are divided in classes according to age. The Fall Session follows the highly successful Summer Session in July and August which boasted the highest enrollment in the program’s history. During the 2010 Summer Session students were given the opportunity to work side by side with professional playwrights, actors and directors from Gloucester Stage. YAW students had leading roles in new plays by Joanna Rush and Gloucester Stage Founding Artistic Director Israel Horovitz during the 2010 Summer Session. Gloucester Stage Youth Acting Workshops help students build self confidence and develop communication skills to use in their daily life as well as give them the opportunity to learn about the skills necessary for professional theatre. A professional training program, Gloucester Stage Youth Acting Workshops encourage students to discover and nurture their creative potential. The workshops include an introduction to theatre basics such as theatre games, improvisation, movement, vocal and physical expression, character preparation, scene study, storytelling, writing, public speaking and confidence building training. All classes are held at Gloucester Stage Company, 267 East Main Street, Gloucester. Class size is limited and registration is on a first come basis. To register, call 978-283-6688.
