Thanks again folks!! Thom, I do a version of the 321 method. About 2 1/2 to 3 straigh smoke, then 2 1/2 wrapped, then 2 plus open foil (gets partial smoke), then I slapem’ on the direct fire (gas grill) for 5 minutes before sit n serve.#BOOM
