Breaking News: An opossum (more commonly known by the affectionate nickname: “possum”) was spotted by the eagle-eyed John McElhenny of Matter Communications walking down the street in downtown Gloucester last night. It occurred to me that, if John knew what I know about these little critters, he might have snatched that possum right off the street and brought it home to mama for the kind of protein you just can’t buy at Stop ‘n Shop.
My own grandpa was a world-class consumer of possum. Oh, the stories he told. Of course, he was the product of another era: the Great Depression and general resourcefulness compelled people to discover all sorts of culinary delights that would otherwise have gone untasted. So, in honor of our own time of recession, where we are being forced to cancel our vacations to Disney World because we can no longer pay for the trip by refinancing our homes or getting yet another credit card, I want us to consider the possum for the first time since my grandpa’s generation. Your kids will love it, I promise. It might even replace pizza on Friday nights.
Stuffed Possum
Ingredients:

1 possum (whole) |
|
1 qt. cold water |
|
1/8 cup salt |
|
5 beef bouillon cubes |
|
2 bay leaves |
|
3 celery stalks (chopped) |
|
2 onions (sliced) |
|
1 bag packaged stuffing |
Preheat oven to 350 degrees. Soak possum in cold salt water for 10 hours. Rinse meat in cold water and refrigerate 2-4 hours. Prepare stuffing according to package directions. Stuff possum cavity with prepared packaged stuffing. Close cavity tightly. Place stuffed possum in roasting pan, add water, bouillon cubes, bay leaves, celery and onion. After 2 hours turn meat. Reduce heat to 300 degrees. Cook for 1 more hour. Test roast, if not done reduce heat and cook until done.
p.s. Make sure your possum is dead before handling. But not too dead. And for more possum recipes, click HERE. And git to eatin’!

The redpolls return, with friends in tow! Two weeks ago we were visited by a half dozen or so Common Redpolls; yesterday and today we have a troupe of thirty. Goldfinch-sized, with crisp white and brown patterned tail feathers and velvety crimson caps, they have the winsome habit of cocking their heads and looking straight at you, as if to say (in the most conversational manner), “I am very photogenic; won’t you concur?”
Come join me Monday morning, February 28th, from 10:00 to 12:00 at the Espousal Center in Waltham,where I will be giving a talk and photo presentation about creating The Pollinator Garden for the Garden Club Federation of Massachusetts. Although this is a state Garden Club Federation event, everyone is welcome. Cost is free for members and $5. for non-members. My extensive pollinator planting list is provided with lecture.

Oh My Lord What A Night! Surprises Galore Mark The DTF Burger Challenge
I don’t even now where to start so I’ll just jot down random things as they come to me in my completely foggy hung-over state of mind.
The night was completely out of control. Big Lar made a surprise appearance out of no where. Ed Collard had a physical malfunction which knocked him out of the competition in the second round.
We had a solid field of 9 competitors including T-Roy, The Cow, Ed Collard, Homeless Ruth, Big Lar, Doug Maxfield, No Mercy Hersey, Frankie “The Silver Bullet” Gwynne, and the Ice Man.
The guys at the Farm Bar and Grille- Noah, Ryan and Brad have created a community dining establishment which IMO is unparalleled as far as a friendly, unpretentious atmosphere where everyone feels welcome. They completely get-it and I’m happy to consider them friends as well as co-hosts for the many excellent events we’ve managed to pull off over the past few years.
Let Me Get This Out Of The Way Up Front.

Kelly grew up in Bridgeport, Connecticut and began his newspaper career there before moving to California in pursuit of his future wife. He was one of more than 1500 animators working for Walt Disney in 1941 when that group went on strike. Kelly moved back east and began work for Dell Comics eventually creating the strip “Pogo.”
This strip was the forerunner of later politically barbed comics such as “Doonesbury”. Kelly is cited as an influence by cartoonists as diverse as Bill Watterson (Calvin and Hobbes) and R. Crumb (Fritz the Cat, etc).
