Cabbage Grapefruit Salad with Citrus Vinaigrette
Ingredients
8 cusps Fresh Cabbage
2 pink Grapefruit
1 cup fresh cilantro leaves
1/2 cup olive oil
1/4 cup rice wine vinegar
1/4 cup apple cider vinegar
1/4 cup super fine sugar
1/2 teaspoon freshly ground pepper
1 teaspoon kosher salt
1/2 cup sliced almond pieces
Step-by-Step
1 cut cabbage into 1 inch pieces; place in large mixing bowl
2 Juice 1 grapefruit directly over cut cabbage
3 remove skin and pith of 2nd grapefruit; using pairing knife cut skinless grapefruit sections; place sections in bowl; squezz any remaing juices from skins of sectioned pieces
4 add all remaing ingredients except almonds; toss well; cover with plastic wrap; let marinate 30 minutes on counter; add almonds just before serving
