My Mom used to make these for the holidays when we were little and I dragged out the recipe to make them myself. Very very simple recipe and a great way to use up that half bag of chips that will go stale if you don’t do something with them………yummmmm……Enjoy!
Potato Chip Cookies
1 pound butter, softened
1 1/2 cups white sugar
2 teaspoons vanilla extract
3 1/2 cups all-purpose flour
1 1/2 cups crushed potato chips
2 eggs
Preheat oven to 350 degrees F. Line baking sheets with parchment paper and set aside
Cream together the butter, sugar, eggs and vanilla.
Mix in the flour and potato chips and stir well.
Drop by teaspoon onto cookie sheets about 2 inches apart.
Bake for 12 to 15 minutes.

Nope, its a pound. Here’s another copy of a recipe I found on CD Kitchen but this one has nuts–I didn’t add the nuts, just more chips. Makes 5 dozen cookies:
Ingredients:
1 pound Butter
1 cup Granulated Sugar
2 teaspoons Vanilla
3 1/2 cups Flour
1/2 cup Nuts (I use Walnuts)
1 1/2 cup Crushed Potato Chips
Directions:
Preheat oven to 350F. Cream butter, sugar, and vanilla. Slowly add flour. (mix will seem too thick) just keep adding flour till all is mixed in. Stir in nuts and potato chips till blended well.
Drop by teaspoon full on greased cookie sheet. Bake for 15 to 20 minutes until you see the edges getting golden brown. Cool and Sprinkle with Powdered Sugar.
