Soft n’ Chewy Chocolate Chip Cookie Bars
Ingredients
2 cups plus 2 tablespoons flour
1/2 teaspoon kosher salt
1/2 teaspoon baking soda
1 1/2 stick salted butter; melted and cooled slightly
1 cup dark brown sugar
1/2 cup granulated sugar
1 large egg
1 large egg yolk
2 teaspoons vanilla extract
1 1/2 cups milk chocolate chips (dark chocolate chips can be substituted)
Step-by-Step
1 In medium bowl, combine flour, salt, and baking soda together; reserve
2 In separate large bowl; combine sugars together; add melted butter
3 using hand mixer; mix on high speed 2 minutes
4 add egg, egg yolk, and vanilla to the butter-sugar mixture; mix 1 minute using hand mixer
5 sift reserved dry ingredients into bowl of wet ingredients
6 using rubber spatula; fold in dry ingredients until just combined; do not over mix
7 add chocolate chips; using large rubber spatula, mix until incorporated into batter
8 line 13×9-inch baking pan with aluminum foil; spray with nonstick Baker’s Joy Cooking Spray
9 transfer batter to prepared pan, using clean hands or small pampered chef rolling pin press into even thickness with smooth flattened top
10 bake in preheated 350 degree oven 23-25 minutes or until bars are golden brown in color and edges start pulling away from sides of aluminum foil lined glass baking pan; cool to room temperature before cutting
11 using overlapping foil, carefully transfer cookie bar to cutting board; shimmy foil out from bottom and discard; cut into squares; serve
Yield: one 9×13 inch baking pan
Note~ Bars can be cut to any size, and will keep in airtight container 5 days; or freezer up to one month (thaw before serving)
