They started at 9:00AM, got into the booze at 1:30PM and finished up at 10:30PM.

Over 50lbs of flour over 15 lbs of sugar.  Table upon table filled with holiday cookies of various shapes, sizes and flavors.  True teamwork in the insane cooking marathon that is Sista Felicia’s Christmas Cookie Baking Day. Video tonight!

What’s A Lobster Dealer Eat For Thanksgiving?

Why Lobster of course. 

The folks that read the blog know that we spent Thanksgiving in NYC. 

After the Macy Thanksgiving Day Parade and watching the Pats we went out to a great restaurant in Chelsea – COOKSHOP.

Now I don’t know about you but if you are going to give me an option to eat lobster over turkey I’ll take lobster 100 times out of 100.  COOKSHOP offered a multi-course prix fixe menu.

Here is my first course, the roasted lobster salad.  Avocado, cilantro,red onion, lobster and roasted chili sauce.  It was RE-DIC-U-LOUS!

The main course was Beef Short Ribs.  Man o man.  It was great.  Loved eating out and being able to enjoy each other’s company instead of the mass hysteria that can be associated with huge Holiday meals.  I vote that we eat out every thanksgiving!

New England Buttermilk Pumpkin Cakes with Sour Cream Apple Caramel and Dried Cranberries

Makes 6 cakes

PUMPKIN CAKE
1 1/4 cup all purpose flour
1/4 tsp baking powder
3/4 tsp baking soda
1/4 tsp salt
1/2 tsp cinnamon
1/4 tsp ground ginger
1/4 tsp freshly grated nutmeg
1/4 cup butter, softened
3/4 cup granulated sugar
1 large egg, at room temperature
1 cup pumpkin puree
1/4 cup Hood® Fat Free Buttermilk
1/2 tsp pure vanilla extract
3 tsp demerara sugar, divided
6 Tbsp sweetened dried cranberries, divided
Hood® Original Instant Whipped Light Cream
SOUR CREAM APPLE CARAMEL
1 cup granulated sugar
1/4 cup water
3 Tbsp salted butter
1/4 cup Hood® Heavy Cream
3/4 cup Hood® Sour Cream
Pinch salt
1/2 tsp vanilla extract
2 Cortland apples, peeled and cut in to 1/2” to 3/4” matchsticks

Preheat oven to 350F. Spray 6 1 cup ramekins with nonstick spray. In a medium size bowl, sift flour, baking powder, baking soda, salt, cinnamon, ginger and nutmeg. Set aside. In a large bowl, cream butter and sugar. Beat in egg, pumpkin, buttermilk and vanilla. Slowly mix in dry ingredients and beat until well combined. Divide batter among ramekins, sprinkle with 1/2 tsp demerara sugar and bake 25 to 28 minutes until a skewer inserted in the center of cake comes out clean. Meanwhile, make the apple caramel. In a heavy bottomed sauce pan, mix the sugar and water. Bring to a simmer over medium-high heat. Stir gently until sugar is dissolved. Allow mixture to boil until mixture starts to darken. When the liquid is medium caramel color turn off the heat and whisk in the butter until melted, then the cream and sour cream til smooth. Add salt, vanilla extract and apples. To serve: Plate cakes individually, spoon caramel over top and top with 1 Tbsp cranberries and whipped cream

Edgewater Cafe, Magnolia

We thought the Edgewater Cafe had gone away, but have rediscovered it! It’s hiding next to JD and Meyers on Lexington Ave in Magnolia. One of the first ethnic restaurants in the area, it serves up Mexican and drinks from the pub.


The Farm Is Having Keggs and Eggs For Thanksgiving Again

The second annual Keggs and Eggs Thanksgiving at The Farm.  The poster’s date is from last year but the whole premise is the same just the date has changed.  This is a Thanksgiving day event.

Julie Geary’s Fool-Proof Turkey Video

You may only cook a turkey one day a year but Julie Geary shows that it is actually easy to make a perfectly cooked bird, brown on the outside and fully cooked and moist on the inside. Her secret is the technique of using butter, lots of it, and coat the entire surface of the outside of the turkey. Cover completely with aluminum foil and cook the turkey, covered with the aluminum foil, up until the last half hour. Remove the foil and the turkey will be white, but after about ½ hour more in the oven (without the foil) the skin will brown perfectly. For some added flavor, Julie also shows you how to place some fresh herbs (such as sage, thyme or parsley) under the skin before cooking. She also has a video to show how to make perfect gravy and another for an easy, basic stuffing recipe.
