We’ve dismantled countless frou frou high brow chefs and food bloggers who couldn’t leave perfection alone and had to go and mess up the perfect lobster roll with such atrocious ingredients as paprika, celery, lettuce, relish onion, pickles, avocado and such ridiculous platforms for rolls such as French baguette rolls and anadama bread.

But what I’m about to tell you is going to turn a lot of what I’m saying on it’s head I guess.  Or another way to look at it is actually more accurate in that as I’ve told you from the beginning- that simplicity and not overthinking the lobster roll and it’s perfection is the way to go so simplifying in the way I’m going to explain actually falls right inline with what I’ve been saying.

Night before last the Mrs asks me to bring home some lobster so she can make lobster rolls.  She tells me she wants to try something different than her traditional recipe.

I brought home 5 lbs of medium shell lobster and she made two lobster rolls based off her original recipe-

Has to be Cains mayo, and hot dog rolls so you can grill them to a golden brown with the unsalted butter.

Notice there is no lettuce, paprika, celery or any other filler. If anything else appears in your lobster roll, you have an inferior lobster roll.

steam the lobsters and shuck the meat

tear the meat into 1/2 inch chunks or so and mix with cains mayo

refrigerate

once lobster and mayo is chilled, butter each side of cheap hot dog rolls (the kind you tear apart)

you do not want to use any goddamn baguette or crusty overpowering roll

you want white bread tear apart soft hot dog rolls

once you butter the sides of the hot dog rolls with SALTED butter you pan brown the roll so its warm and golden brown

just barely browned but the roll should still be very soft

then load up your cool lobster/mayo filling into the warm soft buttery roll and you have yourself the perfect lobster roll

note- NO  LETTUCE- NO  CELERY-NO  PAPRIKA- NO FANCY CRUSTY FRENCH ROLL

I’m here to tell you that there is an upgrade to this and it is by simplifying.

Leave out the mayo and serve with hot drawn salted butter drizzled over the top of the cooked lobster meat inside the grilled buttered bun.

It actually intensifies the taste of the lobster instead of masking a bit of it with the mayo.

It’s now the official recipe of the World’s Greatest Lobster Roll.

My wife and I really enjoyed last night’s Nights on the Neck at the Rocky Neck Art Colony and noted to a couple of artists that, after growing up and living on the North Shore our whole lives, we have never been to Rocky Neck before. Gotta be among the North Shore’s best kept secrets! So as one artist suggested, we found and will now read GMG.

We especially enjoyed listening to the Julie Dukas Jazz Trio at the Madfish Wharf (also mojitos at the Madfish Grille). We remarked that they should have their CDs for sale, and were amazed to find online this am that they apparently don’t have any CDs. Too bad as we would love to buy them!

Great place and great program last night overall.

Last week we told you about Marina Evans‘ new release (see post here).  Well she’s got another one this week, next week and the week after (check this link for new songs each week).  Plus she’s got a parallel project going on in Italy, which she plans to release in October.  And you can see her at the Block Party on Saturday  (full Block Party lineup coming soon).  Busy Woman!

I caught Marina last night just before her set at the Rhumb Line.  Here’s part 1 of that interview.  More fun video and a couple of surprises from Marina coming later this week.

But no need to wait for the Block Party.  There’s plenty going on all week.  Remember Rob Newton’s FALL INTO THE RHYTHM movie/music celebration at Cape Ann Community Cinema starts tomorrow with LA CENERENTOLA  and features The Cowsills on Thursday (more about that here).

Christopher Wood’s paintings at Addison Gilbert Hospital

In the course of my ministry as a priest, it’s not uncommon that I go to the hospital to visit the sick and the dying.  Along the wall of the lobby of Addison Gilbert hospital, on the way to the elevator, there is usually a display of art.  I hardly ever stop to look, but I was really struck by Christopher Wood’s current display of abstract watercolor paintings.

To me, it seems somehow odd to go visit a hospital in order to see art, but at the very least, I recommend stopping to see the paintings if you are at the hospital for any reason at all.  Or maybe you can stop in to see the paintings, and pretend you are on your way to visit a sick relative or get some x-rays done…

He describes his work thus, on an explanatory panel next to the paintings:

“My work is organic, bold, gritty, sensual, and completely inspired by my mad scientist tendencies. I paint ferociously; this creates real energy within the piece.  My painting style and its looseness makes watercolor and optimal medium for me.  I paint wet on wet, this allows the colors to mix themselves on the paper, and allows little experiments/accidents to be created within the piece.”

Besides being an artist who has worked in various media, he has a Masters in Conservation Biology.  Check out his website…

Newton cyclist’s ‘dooring’ allegation sparks debate about police response

A Newton police officer’s response to a biking incident earlier this week has triggered a firestorm of criticism from cyclists and spurred the Newton Police Department to take a closer look at the case.

It all happened during Molly Schaeffer’s usual commute home from work this past Tuesday. Schaeffer, a software management consultant and grandmother of two, said she rides her bike to work daily.

But as she traveled down Beacon Street toward Hammond Street, she said, an old Mercedes pulled up in front of her. While the car was moving, according to Schaeffer, one of the passengers on her side opened the door and yelled “doored.”

Those of you who read GMG know of my disdain for bicyclists who ride two abreast and don’t allow you to pass them safely (not informed and courteous bicyclists, but the ones who think they own the road and that they are training for the Tour De France)

But this trend of opening up doors in front of bikers intentionally is disturbing regardless of how out to lunch the biker may be.  Hopefully they get to the bottom of the trend and force these offenders to do some serious road safety training or pull their license and force the motorists to ride a bike to work for a month or two and see what the bicyclist has to deal with.

A friend of mine, Wayne Corliss, has been diagnosed with a terminal form of Cancer. A bunch of friends are joining forces and (struggling) are putting on a Fundraiser for Wayne and his wife, Dianne. Can you help us spread the word?

It will be held at the Cruiseport Gloucester on Wed. the 12th of September from 7-11pm. The evening includes: Food, Music (Major Nelson and the Screamin’ Jeanies) Silent Auction, Chinese Auction, Dancing and a cash bar. There is nothing more we can do…the battle itself is his & his alone.

How can you take pictures of galaxies and comets without owning a
camera or a telescope?
Long-time GAAC member Gary Meehan has been taking photos of the night
sky using remote, robotic telescopes located out in the Sacramento
Mountains of southern New Mexico for a couple of years now. He’s
imaged comets, emission nebulae, star clusters and galaxies, using
none of his own equipment other than a computer.
At the September 14 GAAC meeting, he’ll explain the advantages of
taking this approach, and explain how you can do this too.
He’ll give a quick overview of the New Mexico facility, and show how
to go about planning an imaging session, including the need to use
different sorts of tools to monitor the remote weather conditions, and
demonstrate an imaging session. If time permits, Gary will show you
how to go about forming a final color picture from a series of images
taken through several filters.
GAAC meets at 8:00 pm on the second Friday of every month, at St Paul

Less Than 2% of groundfish landings in 1917 were landed in 2012 on the same day yet we have a call for more subsidized on the taxpayers back commercial dockage while there’s another $100 Million Dollar buyout of Gloucester Commercial Fishing Boats and a DPA that strangles any reasonable investment in our waterfront unless you are so deep pocketed that you can fight the obstructionists who still think it’s 1917 every step of their way through the permitting process. 
Brilliant.

The Cape Ann Seafood Exchange handled 38,200 pounds of fish Monday. No report was received Tuesday.

Top species landed and average prices Monday were: Small dabs: 7,200 pounds ($1.37) Large hake: 5,900 pounds ($1.92) Large pollock: 4,100 pounds (96 cents)

Small and medium pollock: 3,800 pounds (95 cents) Medium dabs: 2,600 pounds ($1.52)

Other landings

The Buyers And Sellers Exchange (BASE), an electronic auctioning company that sells landings at owner Whaling City Seafood Display Auction in New Bedford, Boston’s Whaling City Auction, and Gloucester’s Whaling City Auction,handled 59,100 pounds of fish and 108,700 pounds of scallops Monday.

Are You Backing Up Your Digital Life? I Just Bought This 2TB External Drive For a Steal.

My last 500GB external drive filled up about a year ago and I was searching for a larger external hard drive to save all those photos, videos and music that you see on the blog but the prices were insane.  The reason was because of the Earthquakes in Japan had knocked all these manufacturing plants offline.  now that they are back operational the costs for safeguarding your data against failure has never been cheaper.

And when you think about those precious photos of your children or grandchildren or those vacations to special places that you took and have saved on your computer how can you not get on it and back up your digital life.  I was naked for the past year without having the past year’s data backed up.  Not any more.

I highly suggest you get one of these external hard drives and set up your computer to automatically back up your essential files.  Think about your baby or grandbaby’s first steps in video.  Can you honestly say that $120.33 is too much to pay to insure that?

Anyway, prices have come down.  Your computer WILL fail eventually. They all do.  Back it up or lose life most precious moments, the choice is up to you.
