LOBSTER CORN DOG ROLLS

 
Recipe: Lobster Corn Dog Rolls with Tamarind Ketchup

 

 

Lobster Corn Dogs Rolls
 
 6 c Vegetable oil
3 c Corn meal

1/2 c Sugar

3 Eggs

1/4 c Milk

2 Lobster tails; (8-ounce)

—————TAMARIND KETCHUP——————–

2 c Tamarind; fresh
2 c Red tomato; chopped

1 c White onion; diced

3 Cloves garlic; minced

2 c Orange juice

1/2 Box brown sugar

1 c Mango; chopped

2 Red bell peppers; grilled

Preheat 6 cups vegetable oil to 350 degrees. Whisk together corn meal, sugar, eggs, and milk, set aside. Remove the lobster tail from the shell and skewer the lobster meat through the center from the bottom of the tail to the top. Dip the lobster in the batter and deep-fry until golden brown and crisp, about 4 minutes. Serve with Tamarind Ketchup.

TAMARIND KETCHUP:
In a large saute pan over medium-high heat, cook all ingredients until tender. Transfer the mixture to the jar of a blender and puree until smooth. Pour the ketchup through a fine sieve into a medium bowl. Season to taste with salt and pepper.

The Challenge Has Been Issued- Red Sox vs Good Morning Gloucester Who Ya Got?

image Red Sox Executive Chefs Ron Abell and Nookie Postal have challenged Your Boy Joey to a lobster roll Battle Royal!

Sure these guys “feed 38,000 hungry, screaming fans 80 plus times a season” according to the Gloucester Daily Times, but the problem is that they are about to run into the buzzsaw that is know in the entire known universe as THE WORLD’s GREATEST LOBSTER ROLL documented in these pages time and time again.

Poor fellas.  They should have picked on Curt McAdams  from Bucky’s BBQ and Bread who uses French baguettes and loads the goddamn roll up with lettuce, then they would have easily rolled over the competition but they had to go and call out Good Morning Gloucester.

It might be hard for some of us to believe but Fenway Park and the Red Sox have two gourmet-class executive chefs overseeing all of the ballpark food needs. Not only do they feed 38,000 hungry, screaming fans 80 plus times a season but they also serve hundreds of catered events inside the park, from weddings to class reunions to birthday parties.

Like the team, the Red Sox chefs are not afraid of competing with anybody, and they are so confident that they claim that the Fenway lobster roll is better than even what is served in Gloucester.

I would have to add that I have a great group of contributors and GMG community that make the blog what it is.  Without the people that check it out, write in to comment and give us encouragement it would just be a bunch of folks posting pictures and commenting on their own lives.  It’s the GMG community of people who write in and share similar experiences, likes and dislikes that make GMG special.  I’m just one part of it.  Oh and I’m also a lobster dealer, not a lobsterman.

Gloucester Seafood Display Auction- Grey Sole

Here’s some grey sole at the Gloucester Seafood Display Auction.

Within the first couple of years with my wife we were sitting at her parents house and somehow the topic of fish came up.  My mother in law told me she didn’t like flounder, but she loved sole.  I told her that sole is a flounder.  There’s a lot of people who don’t really know their fish.  I must admit as much fish as I’ve eaten in my lifetime if someone fried a fresh haddock or a cod fillet I’d have a hard time distinguishing the difference (and I’ve eaten tons).
My personal favorite types of fish in order of preference- fried whiting, baked haddock with the breadcrumbs, raw tuna, fried grey sole or yellowtail flounder, sockeye salmon.
Favorite shellfish- The Mrs’ Lobsterolls, steamed lobster with bernaise dipping sauce, baked stuffed littlenecks with my mothers’ stuffing recipe, Mexican Campeche brand shrimp with cocktail sauce, fried clams, mussels fra diavolo (extra spicy).

Rob and Kristin Parsons Lobster Rolls

Rob and Kristin Parsons submitted these photos of their lobster rolls.  While I give high marks for the omission of lettuce, celery and other filler, the buns seem to have been left on the grill pan just a tad too long.  A little more lobstermeat and a little less time on the grill would bring these lobster rolls into the upper echelon of lobster roll presentation.

Beautiful Industry- Miss Merideth Lobster Buoys

Here’s a bunch of Matt Cooney’s lobster buoys.

Matt has a very distinct pattern for his buoys.  No one would mistake his buoy  for their own because it is so unique.  Every so often a couple of lobstermen have very similar color markings on their buoys which can make things confusing  when they are fishing the same areas.
