Bella Mushroom & Spinach Risotto with Smoked Mozzarella

Ingredients

5 tablespoon salted butter 1 tablespoon diced shallot 1/2 cup diced sweet onion 2 cups Arborio Rice 11/2 tablespoon fresh thyme leaves 1/2 teaspoon freshly ground black pepper 1/2 teaspoon kosher salt 8 oz. sliced Baby Bella Mushrooms 4 cups vegetable stock 5 cups water 1/2 cup shredded Fontina cheese 3/4 cups shredded Smoked Mozzarella Cheese 5 oz. baby spinach

Step-by-Step

1 combine 4 tablespoons salted butter shallots and sweet onion in medium size sauce pan; over high heat melt butter and sauté shallots and I’m in until onions become translucent approximately 2-4 minutes 2 add mushrooms time risotto salt and pepper; mix well; sauté three minutes over high heat; stir often 3 add 1 cup vegetable stock and 1 cup water; stir; Return to boil and continue to cook until liquid is 90% absorbed, stir often 4 repeat step number three until all water and vegetable stock has been added and absorbed *Note~The adding of liquids process should take approximately 15 to 20 minutes in total, be patient and stir often 5 lower heat to medium setting; add spinach, shredded fontina, and smoked mozzarella cheese; mix until spinach wilts and cheese melts 6 add remaining 1 tablespoon salted butter; mix well; serve immediately
