Tremendous job Jon, as we’ve come to expect!
Jon writes,
Hey Kim,
I hope all is well – summer is just around the corner!
Anyways, I just finished up another passion project that I thought you might find interesting. I’m not sure if you’re a big sushi fan or not, but I filmed a short interview with my friend and local chef Max Millefoglie. He’s the executive sushi chef at Lat 43, and he is super talented.
I can’t begin to describe how interesting this shoot was, and I was trying to absorb as much info as I possibly could about the craft. There is so much more to sushi than I ever could have imagined, and I’m now a fan of it myself!
Cheers,

P.S. Handling of fish didn’t know that! 🙂 Everyday is a lesson!

This sushi bar is very good. I am always surprise that the cook don’t protect his beard. Maybe I am too fussy…

Great video by Jon Cooney! Thanks for sharing Kim.
My husband and I LOVE sushi and we’re happy to have great sushi at so many Gloucester restaurants. Max and the sushi crew at Latitude 43 are great, and sitting at the sushi bar is one of our favorite nights out. All the sushi, but especially the ‘chef specials’ are works of art. Having sushi at restaurants beneath the Kyoto train station was quite the experience. I have to say, the fish tastes fresher here.
And like most American meals, portions are bigger. Next time my Reiki Teacher Hyakuten Sensei (from Kyoto Japan) is back in Gloucester, I want to bring him to Latitude 43 for sushi and to meet Max. Mackerel is not just for bait! One of our favorite sushi items, is not always on the menu, but if you want Saba (Mackerel,) let Max know and he might be able to pre-order it for you. 🙂
