Homemade Vinegar Peppers

Thanks to GMG FOB and friend Brian O’Connor this recipe was created!  Brian delivered a bag of fresh sweet and mildly hot peppers from his garden a few weeks ago. After doing some research,  I was able to developed a no fuss recipe that is easy to prepare just in time for the holidays. Jars of homemade Vinegar Peppers make great hostess gifts during this time of year. Thank you for the peppers Brian, my family  and friends we will be enjoying them this moth!

Vinegar Peppers

Ingredients

6 cups white vinegar

11/2 cup  sugar

2 tablespoons peppercorns

2 tablespoons garlic; smashed

2 teaspoon kosher salt

2 teaspoons red pepper flakes

4-5 cups whole peppers; washed clean (sweet or hot peppers can be used)

2 large mason jars; with lid and cuffing ring

Step-by-Step

1 combine vinegar and sugar in medium sauce pan; stir until sugar dissolves; bring to boil; immediately remove from heat

2 place 1 tablespoon crushed garlic, and 1 tablespoon peppercorns  into each mason jar

3 add 1 teaspoon kosher salt, and 1 teaspoon red pepper flakes into each mason jar

4 place  peppers into jars; carefully fill each jar with hot liquid; completely submerge peppers  leave ¼ inch head space at top of each jar

5 fix and fasten lids and rings onto jars; shake each jar; leave on counter 3 hours

6 store in refrigerator 3 days before serving; will keep refrigerated 1 month

*Note~ serve with salads; stuff with Prosciutto & cheese, use to make Pork and Vinegar Peppers, serve on an antipasto platter
