Spooktacular Monster Mac & Cheese
Ingredients
1 lb. Cellentani Pasta;
1lb. Velveeta Cheese; Cut into 1-1/2 inch pieces
1/4 cup milk or heavy cream
3 tablespoon salted butter
1 tablespoon liquid green food coloring
1 small zucchini or cucumber
1 pitted black olive; cut into 2 small triangle pieces
1 Spanish pimento olive; cut in half
1 eggplant
4 Chicory leaves
1 pepperoni slice
Step-by-Step
1 Bring large pot of water to rolling boil; add 1 teaspoon kosher salt; return to boil; cook Al dente and strain; return pasta to pot
2 combine Velveeta Cheese pieces, milk and butter in large microwave safe bowl; heat on full power for one minute increments until cheese is melted; stir between each minute
3 add melted cheese to pot with pasta; mix well
4 add food coloring; mix well
5 transfer green cheesy pasta to 9 x 13 glass baking dish
6 using vegetable peeler; cut 5 strips of eggplant skin for monter hair
7 place 1-2 strip at top end of glass baking dish; enough to cover top edge of baking dish
8 using paring knife cut zigzag pattern on one side of 2 eggplant strips; fix zigzag eggplant hair strips on top of existing eggplant strip at top of baking dish
9 place 1 remaining eggplant strip 1 1/2 inches below zigzag eggplant strip; for eyebrow
10 cut 2 one inch zucchini rounds for eyes; fix one half pimento olive on each eye, top with small triangular cut of black olive
11 cut 1 two inch zucchini round for nose; fix into place
12 using paring knife cut remaining eggplant strip into a desired mouth shape for your monster face; fix into place
13 cut 3 teeth shaped pieces from remaining zucchini; fix into place; add pepperoni slice for monster tongue
14 fix Chicory leaves on edge of baking dish just below the monsters eye line; for ears
15 serve immediately while warm
