Linguine Con Aglio e Olio
Ingredients
1/2 lb. pasta; cooked Al Dente and strained
3/4 cup olive oil
3/4 cup red pepper
3 garlic scapes; roughly chopped (3 cloves galric can be substutited)
1/2 cup sweet vidialia onion; roughly chopped
1 cup Kalamata olive’s; pititted
1/4 cup thinly sliced and diced prosciutto
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground pepper
1/4 cup fresh parsley; roughly chopped
1/4 cup Romano Cheese
Step-by-Step
1 heat 3/4 olive oil in large frying pan; add pasta; Sauté three minutes
2 remove pasta from frying pan; reserve in serving bowl or platter
3 add remaining 1/4 cup olive oil to fry pan; add peppers,,garlic scape, onions, Kalamata olive’s,and prosciutto; mix well; season with salt and pepper; sauté five minutes
4 add reserved pasta to fry pan; satue 2 minutes
5 transfer back to serving platter; top with fresh parsley; and freshly grated Romano cheese; Serve immediately
