Blue Cheese Stuffed Green Olives
Ingredients
20-25 Large colossal green olives; pitted
crumbled blue cheese
2 cups finely chopped walnuts or almonds
2 8 oz. cream cheese; softened (I prefer to rest cream cheese on counter 20 minutes before assembling)
Step-By-Step
1 strain olies from brine; pat dry with paper towels
2 using clean hands stuff each olive with crumbled blue cheese
3 using 1 inch cookie scoop fix scant cream cheese scoop into palm of hand
4 using opposite hand gently flatten cream cheese scoop; place 1 stuffed olive in center
5 carefully fold cream cheese over and around stuffed olive; roll between palms of hands
6 roll in chopped nuts; place on waxed paper or parchment lined cookie sheet; chill 2 hours before serving
