Zucchini Fries
Ingredients
1 baby size zucchini, cut into 1/2 inch x 3 1/2 inch pieces
1 1/2 cup flour
1 teaspoon Kosher salt
1 teaspoon freshly ground pepper
3 cups Sicilian Breadcrumbs (recipe featured in “Gifts Of Gold In A Sicilian Kitchen With Sista Felicia; Harvest” on page 201)
2 large eggs
1/4 cup milk
4 cups La Spagnola Oil
1 tablespoon freshly grated parmesan cheese
Step-by-Step
1 sift together flour salt and pepper; mound on clean work surface
2 mound Sicilian Breadcrumbs on clean black surface
3 dip each zucchini strip in seasoned flour; cover all sides; reserve
4 whisk together eggs and milk; reserve egg bath
5 dip each floured zucchini strip into egg bath coat all sides; immediately place on mound of Sicilian style breadcrumbs; using clean hands, cover and coat zucchini strip with bread crumbs; reserve
6 heat oil and large frying pan; add 8 -10 zucchini to hot oil; fry 3 minutes; turn pieces; fry 2-3 minutes until golden brown on all sides
7 using kitchen tongs remove from hot oil; cool on wire rack lined cookie sheet; sprinkle with Parmesan cheese; serve immediately
Note~ I often serve Zucchini Fries with dipping sauce of warmed Sunday Sauce!
