This is one of The Mrs’ staple dishes for when she needs to throw something together quickly for us.
She puts some turkey meat in the pan with taco seasoning and browns it. Then we always have cans of frijole negros and salsa laying around and even a little mexican cheddar.
It’s full of lean protein and packed with flavor and can be whipped up in minutes.

I’ve never even heard of Sea Breem. The Mrs liked it but she’s never been a fan of working around bones when eating fish.
The company, food and service was great at Ithaki. I know the Mrs given the opportunity, would have ordered something else though.

Here is the recipe for the Corn Salad that I’ve been getting requests for. It comes from the Barefoot Contessa-
Fresh Corn Salad
5 ears of corn, shucked
1/2 cup small-diced red onion (1 small onion)
3 tablespoons cider vinegar
3 tablespoons good olive oil
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/2 cup julienned fresh basil leaves
In a large pot of boiling salted water, cook the corn for 3 minutes until the starchiness is just gone. Drain and immerse it in ice water to stop the cooking and to set the color. When the corn is cool, cut the kernels off the cob, cutting close to the cob.
Toss the kernels in a large bowl with the red onions, vinegar, olive oil, salt, and pepper. Just before serving, toss in the fresh basil. Taste for seasonings and serve cold or at room temperature.

On my way to do some business this morning I dropped by Stone Soup in Ipswich to confirm the rumors that they are indeed coming to Gloucester in Lobster Cove. From what the waitress told me they should be open within a week or so.
