My Grandmother’s Super Simple Peppermint Walnuts Recipe

Listening to Sunday’s podcast with Lisa and John and learning about Lisa’s nut company, The Nutty Redhead, and passion for all things Victorian, I thought she would want to know about this authentic Victorian recipe. My Mimi always served Peppermint Walnuts at Christmastime because she had in turn learned if from her mother, my great grandmother! My Mom made minted walnuts, too, and every holiday season I make several batches for friends and family. Nutty snacks are especially great during the holiday season when you want something sweet but don’t want to load up on the butter and white flour. Ingredients

4 Cups sugar

2 Cups water

4 Tbs. corn syrup

pinch of salt

32 marshmallows (regular size, not minis)

2 tsp. pure peppermint extract

16 Cups walnuts

In a large pot cook first four ingredients until very soft ball stage, 230 degrees. Add marshmallows and stir until melted Add peppermint oil. Add walnuts and stir until nuts are thoroughly coated with frosting. Turn out onto parchment paper and spread evenly about 1 -2 inches thick. When thoroughly dry, about 4-6 hours, break any large clumps into smaller pieces and store in airtight containers. Makes approximately 16 cups.

Note ~ The recipe can easily be halved or quartered. Add fewer nuts proportionately for a sweeter batch. We save Bon Maman jam jars throughout the year as they make  the perfect gift-sized container.

We have some great cookie bakers, judges and prizes lined up for this Saturday’s Season’s Best Cookie Competition at the Cultural Center at Rocky Neck during our Winter Solstice Party from 2-4:00.  This also happens to be Mayor Carolyn Kirk’s birthday, so come by, have some cookies, home made mead and other goodies, and wish her a Happy Birthday.

Our next to the last weekend of the Rocky Neck Holiday Art & Fine Crafts Festival promises to be a great last minute shopping experience and a fun time for all who come to the party and cookie competition, which will start promptly at 2:00PM.  The festival runs this weekend Saturday and Sunday from noon to 4:00PM and December 28 and 28 from noon to 4:00PM with a Pre New Years Party on Sunday the 29th from 2-4:00pm.

Baccala ~ Italian Style Codfish…One Of The Seven Fishes

Baccala ~one of the “Seven Fishes” prepared in Sicilian homes on Christmas Eve. Growing Grandma Felicia prepared and hosted the feast of the 7 fishes the weekend before Christmas each year. Her celebration was the official kick off to our holiday season.

A few years ago I invited “The Godmother” of Gloucester to my kitchen to film  a few video cooking tutorial recipes about the Feast of the Seven Fishes with Gallo Productions Inc. It was a night Gianni Gallo, his staff, our small audience and  I will never forget. The set was ready to tape 4 recipes, but the Godmother and I were simply having to much fun to stay on schedule to say we had a few laughs would be a huge understatement. I vividly remember hearing the words “Cut…Cut…Testing 123”  through the laughter filling my kitchen that evening. Gianni Gallo and Joseph Langhan created this for the Gloucester Daily Times.

Fun facts for A – L:

The peppermint angelfish is a very rare species from the South Pacific. These candy-striped fish are found at depths of over 300 feet!

The banded coral shrimp is colored like a candy cane! While they look like shrimp, these tropical crustaceans are more closely related to crabs and lobsters.

Could there be a more festive sea creature than a Christmas tree worm? These tropical marine worms use their feathery tentacles for both feeding and breathing.

Decorator crabs are known for decorating themselves with seaweed and small marine animals for camouflage. This decorator crab used tiny sea stars!

In the United States, these fish are called bluefish, but in South Africa, they’re known as elf! Whatever you call them, these speedy fish can be found off of every continent but Antarctica.

Nudibranchs are sea slugs, related to snails and land slugs. The frosted nudibranch is a Pacific species, known for feeding on a various prey, including crustaceans, snails, and sea squirts.

Ginger gobies are small bottom-dwelling fish found in Eurasia. Females lay their eggs on rocks, and afterwards, the males guard the eggs until they hatch.

The holiday darter is found in rivers in the Southeastern United States. These colorful fish feed on small crustaceans and aquatic insect larvae.

Antarctic icefish produce antifreeze proteins. This prevents ice crystals from forming in their blood, allowing them to live at freezing temperatures that would kill most fish species.

Jingle shells, jingle shells, jingle all the way! A jingling sound can be heard when waves crash upon beaches covered with these oyster-like shells.

Do you enjoy sledding when the snow is just right? When not in the water, Antarctic king penguins are often seen tobogganing along the ice on their bellies.

Christmas Island is known for its bright red land crabs. Once a year, over 40 million of these forest-dwelling crabs migrate to the ocean to lay their eggs.

The Winter is Upon Us

Snow photos make great content. But I just got a message from home: LEAVE NOW! internet is going in and out . . .  no phone . . .  at all … If i were you I would get my FA out of there. They just plowed here (I think she’s talking about the issue of access to our driveway). So, I guess it’s time to go. Thankful that I have a 4WD Jeep. My commute is only 6 miles to Rockport. Tomorrow, the CATA (Cape Ann Transportation Authority) bus might be good. 60 cents? Ya think? Our area, Cape Ann, is predicted to get 5 to 7 inches of snow. Maybe! If I have internet when I get home, I’ll let you know more.

I am doing what I like to do best – hunt and play!  Hi, my name is Leo, I am a five-month-old, orange-and-white male kitten. I am staying at the  Cape Ann Animal Aid (CAAA), located at the Christopher Cutler Rich Animal Shelter in Gloucester.
