Are those white asparagus, or do they turn green as they mature? It was great to see you today in your awesome fluorescent orange shirt. I always enjoy our talks.

It was nice to see you too EJ. We have 50% green asparagus and 50% purple. That one poking out is a purple. To make white asparagus you have to use deep mulch or black plastic to keep the shoot from seeing any sunlight. That early riser looks white because it just appeared.
