Cheesy Fingerling Potatoes
Ingredients
1lb. fingerling potatoes
1/4 cup olive oil
11/2 teaspoon kosher salt
11/2 teaspoon freshly ground pepper
3/4 cup Velveeta Cheese
3 tablespoons whole milk
1/2 cup cooked & crumbled bacon pieces
1/3 cup fresh chive; cut into bite size pieces
Step-By-Step
1 cut each potato into quarters
2 place potatoes in microwave safe bowl with matching lid; add 1/2 cup water; secure lid; microwave 6 minutes on high power
3 strain water from potatoes; drizzle olive oil over potatoes; toss well; transfer potatoes to cookie sheet
4 season potatoes with salt and pepper
5 bake in 475° preheated oven 15-20 minutes until potatoes are browned and fork tender
6 cut Velveeta cheese into pieces; place in microwave safe bowl with milk; microwave on full power one minutes; mix until milk and melted cheese come together making smooth velvety cheese sauce
7 transfer potatoes to serving platter; drizzle velvet cheese sauce over tops of potatoes; sprinkle with bacon pieces and chive; serve immediately
