For the Chef’s Table dinner that I was so very fortunate to recently attend, Chef Matt Beach prepared simply the most delicious apple tarte Tatin you could possibly imagine.

A tarte Tatin is a tart cooked upside down and made with fruit (typically apples) that have been caramelized in butter and sugar prior to baking. The recipe originates from the Centre Region of France, a rich agricultural area where many tree fruits are grown. Peaches, plums, pears, and apricots may also be used to make the tarte.

Dennis, of the oleaginous windpipes and great collection of hats, is truly a master of the blues. Not only that, but of many other styles, too. Why am I telling you this?? You should already know!  His gunzel  Matt Stubbs has travelled the world  many times around backing up many famous cats. A sizzling guitarist, watch his fingers: now you see it, now you don’t. And Chris? Well, he’s the de facto Rheumful o’ Blooz agitprop, reedy to scramble your eggs with his whisking style.

Gloucester Schooner Festival awarded four scholarships to Cape Ann organizations who foster greater knowledge and appreciation of Cape Ann’s coastal waters

On Tuesday, December 3rd at Maritime Gloucester, the Gloucester Schooner Festival awarded four scholarships to Cape Ann organizations who foster greater knowledge and appreciation of Cape Ann’s coastal waters by providing opportunities for young people to sail, row or otherwise become immersed in our ocean environment. The 2013 Gloucester Schooner Festival Awards were given to adults and student representatives from GHS Sailing, Cape Ann YMCA, the Gloucester Museum School and Sea Scout Ship 5. Checks for $1,000 were presented to each organization. The grants are made available through the generosity of the corporate sponsors of the Schooner Festival, as well as raffle and merchandise sales.

My Grandmother’s Garden

Excerpt from Oh Garden of Fresh Possibilities! ~ Notes from a Gloucester Garden, Chapter 22 ~ “My Grandmother’s Garden.”

In the early 1960s my grandparents purchased (for the amazing sum of seven hundred dollars!) a picturesque half-acre lot with private beach rights on Cape Cod. Their dream was to build a cottage on the tall bluff overlooking the bay. Coincidentally, my grandmother continued to build their home in successive seven hundred dollar increments. Seven hundred dollars paid for digging the cellar, the next for pouring the cement for the foundation, and seven hundred dollars paid to frame the house. My grandfather finished the remaining work, and they were still building the cottage when we began to spend our summers there. He always had a hammer in one hand and a fistful of nails in the other, and I was thrilled to follow him about holding the nails.

My grandparents worked hard and created wonderful homes they generously shared. While still a young mother and throughout her life, my grandmother taught ceramics at the pottery studio our grandfather built for her. Working together, whatever they touched became transformed into something beautiful. Their homes had an enchanting and joyful atmosphere, or perhaps it just seems that way, recalled from a childhood of fond memories. When I was making plans to attend art school in Boston, my grandmother shared with me her portfolio from Parsons School of Design. I had come to spend the weekend to help her close down the house for the winter. There, in her garage, tucked in an old cupboard, she carefully pulled out a well-worn, though neatly arranged, portfolio filled with her watercolors and sketches. Imagine, keeping her portfolio safe all those years, possibly with the hope of communicating some part of her earlier self to one of her grandchildren.

Eventually, their gray-shingled summer dream cottage was made inviting by a screened porch, blue painted shutters, and a white picket fence. A dooryard flower garden was planted in front, and around back a vegetable and flower garden were sited atop the cliff overlooking the bay. A narrow, sandy path bordered with deliciously fragrant wild beach roses led from the garden to the steep stairs descending to the beach. A weathered picket fence and rickety salvaged gate connected to a wooden archway enclosed the flower garden. By mid-summer the entryway to the garden was embowered with a cloud of sky blue morning glories. Situated in a haphazard manner outside the gated garden were wind- and weatherworn 1920s bamboo armchairs and matching comfy chaise lounge. On some days we would play imaginary children’s games there in her garden overlooking the sea, and on other days we would draw and paint, make clay things from clay foraged from the bluff, and catch fat, helpless toads. I helped my grandmother plant hollyhocks and marguerites and marigolds. The colors, so vividly clear and fresh; flowers growing by the sea appear even more beautiful, perhaps from the ambient light reflected off the water.

Weather permitting, we usually served dinner on the porch. All the porch furniture was painted my grandmother’s signature blue. We ate at a long table with a pretty white-on-white embroidered cloth and round crystal rose bowl full of whatever flowers we had collected that day. We would have family feasts in the fading rosy light, memorable dinners of freshly boiled lobsters and mountains of steamed clams, buttery and sweet corn-on-the-cob, freshly picked vegetables and fruit, and ice cream.

Blissfully lying in bed early in the morning, I recall hearing the soft cries of the Mourning Doves and the cheery calls of the Bobwhites, mingled with the inviting sound of the surf. From my bedroom window I could look out across the garden to the bay and see the ships and sailboats coming and going in the sharply sparkling sea. The transcendent harmonies of the surrounding undulating sea-rhythms and shifting light, the blend of flower fragrances, and birdsongs created the desire to in turn provide similar experiences for our children.

Some years later and newly married, my husband and I were visiting my grandmother at her Cape house. We sat with her in the living room listening to her usual captivating tales, and told her our plans for our new life together. My husband later remarked to me how beautiful she looked. Mimi was wearing a summer shift in a lovely shade of French blue, seated in a chair slipcovered in a blue floral print, with the shimmering azure sea framed by the window behind her, her china blue eyes gazing serenely back at us.

When local New Orleans transplant, Henri Smith, and his band take the stage Saturday and Sunday at the Larcom Theatre in Beverly, they won’t be the only people in the house with musical instruments.

Gloucester Getting City-Wide Lighting Upgrade!

Gloucester  Mayor Carolyn Kirk is pleased to announce the completion of a four-year, city- wide lighting upgrade that will produce significant energy savings estimated at l.2 million kilowatt hours annually. The upgrades include l8 individual projects in nine municipal buildings and Will result in improved safety and better lighting quality in these buildings.

Gloucester was designated a Green Community by the Massachusetts Department of Energy Resources (DOER) in 2010. As part of that designation, DOER provided funding to help the City achieve a 2() percent reduction in municipal energy consumption over five years. The lighting projects are part of that greater five-year energy reduction plan and are projected to reduce the City’s energy consumption by seven percent.

Mayor Kirk stated, “Our community benefits from the clean energy generated by the Wind turbines. Similarly, we all benefit by reducing energy Consumption. It is better for our pocketbooks and for our planet. l am proud of the progress We are making in reducing energy costs While helping to build a sustainable future.”

As a result of Green Community grant funding and use of National Grid incentives, the cost to the City for the lighting projects was 53 percent less than it would have been and resulted in a savings of $710,000.

In addition to the lighting projects, Green Community grant funding has been used to purchase idle reduction technology as part of a pilot project for the city’s vehicle fleet. The goal is to reduce vehicle fuel consumption and emissions. The grant funding is also being used to explore the potential retrofitting of City streetlights with LED lights in order to further reduce municipal energy consumption and costs.

The Green Community projects are managed collaboratively by the Department of Public Works and the Community Development Department with support from the Clean Energy Commission. Together, these two departments and Commission are Working to develop and fund additional energy reductions projects.

At this time of year most of us, I sincerely hope, are enjoying cooking and eating delicious holiday meals and treats. Like many of us, I developed a love for cooking because of festive childhood memories centered around making holiday deliciousness with my mom, sisters, grandmothers, and friends. I also love to cook because of my experience when very young of working at a country French restaurant, located in my hometown of Dennis, (the other) Cape Cod.

I should clarify and say the owners of the restaurant were Italian and Swiss, but the chef was all French—Bernard was his name—a very slender, fiery-tempered, red-headed, and red-faced Alsatian man. I was hired at 13, initially to sew new tablecloths and curtains for the restaurant and then was kept on, working at first as a salad girl, and then given increasingly more challenging positions. I adored working there not only because of the many fascinating personalities and interesting jobs, but because each afternoon at four o’clock every member of the staff sat down together at a long dining table to eat a delicious dinner prepared by the Chef. The meals were oftentimes fresh fish caught by the owner earlier that day, and even a simple hearty sandwich on beautifully crusty French bread baked fresh that morning seemed wonderfully tasty. I loved, too, the kitchen garden, located just outside the dining room’s large picture windows. One of my jobs was taking care of the garden and I learned much from Chef Bernard about growing herbs and vegetables. Today it is commonplace for American restaurants to have kitchen gardens and for Chefs to shop for produce from local farmers but back then it was not the norm to grow your own.

I will never forget one very special evening when Chef Bernard was seen with a shotgun, chasing around and around the garden, dressed in his full chef’s wear, big white hat and all, cursing at the top of his lungs (in English, French, and German), and with a dining room full of patrons, because rabbits were eating his prized greens! The very next day Haveahart traps were placed in the garden by the owners and rabbit stew was promised to us by the Chef although, as far as I know, none were ever captured.

For the next ten years I worked in a range of different types of restaurants and night clubs in a variety of positions, including hostess, cook, cocktail waitress, and bartender. These jobs supported me as I worked my way through art and design school. Are there any job as memorable as our first jobs? My early jobs in restaurants led to interior design projects working with several architects on a dozen Boston restaurants, including Hammerley’s and Flora’s however, the experiences and kind (and colorful) people at my first job left a deep and lasting impression.

I am sharing this long-winded story because Sunday night my husband, Tom, and I were invited to join Savour’s Open Chef’s Table. Chef Beach’s dinner was simply sublime and the wines Kathleen chose to accompany each course were exquisite. Megan was the sous-chef and John Lamarinde was in charge of service, and both did a fabulous job at that. While enjoying Chef Beach’s dinner and the lively conversation and company of fellow guests I was reminded of those staff dinners at La Coquille, and not just because of Matt’s extraordinarily delicious dinner and the warm ambience around the Chef’s Table, but because the main course was Rabbit Ragout!

Chef Beach is sharing his recipe for Rabbit Ragout! Have you ever had rabbit? If not, you are in for a superb treat, especially with the slow-cooked method in which Chef Beach prepares the rabbit. With the many photos from the evening’s event, this post would be far too long to include the recipe. The recipe will follow in a day or so.
