YEAH, Magnolia is getting a Café called The Happy Humpback Café.  The location is on the corner of Hesperus and Lexington Avenue.  As soon as I have more details will post.

Marshalls Farm stand is opened

Opening day 2021! The farm stand will officially open 9am this morning. We will have most of our staples set up and ready to sell this morning. Deliveries will be happening all day and we will need to price and put out. Perfect weather day for us to get the store set up and ready to go! Chipotle Carrot Soup with Red Apple Balsamic

Sweet Apple Balsamic, Spicy Chipotle Olive Oil and crisp bacon make this soup a real treat!

Serves: 4

Ingredients:

  • 6 slices bacon
  • 1/4 cup Red Apple Balsamic Vinegar
  • 1/4 medium onion chopped
  • 1 1/2 lbs carrots, peeled and sliced into 1/4 in rounds
  • 1 Tbsp Chipotle Olive Oil
  • 2 Tbsp honey
  • 2 3/4 cup water, vegetable stock or chicken stock
  • Sea salt
  • Fresh, thinly sliced scallions
  • 2 Tbsp créme fraîche
  • A few thin slices of red chili
  • 1 small red apple, julienned
  • Juice of 1/2 lemon

Directions:

  1. Preheat oven to 400° F. Lay bacon on a sheet tray and baking rack. Using a pastry brush, brush Red Apple Balsamic Vinegar on both sides. Bake for 20 minutes, basting with more balsamic every 5 minutes. Remove from oven.
  2. Heat Chipotle Olive Oil in a medium sauce pan. Add onion and a pinch of salt. Sweat at a medium-low heat for 8-10 minutes.
  3. Add carrots with a pinch of salt and saute for 10 minutes. Add in honey and lemon juice.
  4. Cover the carrots with water or stock and simmer for 20 minutes until carrots are tender. Purée in a food processor or blender, adding more liquid if necessary to reach desired consistency. Add seasoning if desire.
  5. Ladle into warmed bowls. Garnish with a dollop of créme fraîche, red apple, bacon, fresh scallions and chilis; drizzle with Chipotle Olive Oil.
  6. Vegetarian option: Toss apple slices with Red Apple Balsamic Vinegar, scallions, chilis and garnish over créme fraîche.

Dear Family, Friends (old and new), and customers….
It’s with a heavy heart that I find myself writing this post. As everyone knows 2020 was one of the hardest years for so many of us in all ways, especially those who have a small business. We hoped here at Sherry’s that 2021 would be off to a better start, but that clearly is not the case. With little help from the government at both State and Federal levels and Covid-19 regulations becoming stricter (and sometimes illogical), we have decided to close our doors for good. A year ago today we never would have thought this would have been the case but the pandemic has taken an extreme toll on us.
I am grateful for all the customers who have supported us along the way, with many becoming more like friends and family. I am grateful for my staff who have worked so hard and adapted to the crazy changes we now find our new-world norms. And most importantly, I am grateful for each and every one of you who have walked through our doors and welcomed us to the Magnolia community. Starting tomorrow, January 19th, 2021, we will be closing our doors effective immediately.
Thank you again for the past three years. You have all humbled me with your kind words and friendships over the past 3 years that I am forever grateful.

Maple Balsamic & Herb Chicken

Ingredients:

  • ¼ cup Maple Balsamic Vinegar
  • 2 Tbsp pure maple syrup
  • 1 Tbsp Dijon mustard
  • 2 cloves garlic, minced
  • ½ tsp. fresh thyme
  • ⅛ tsp. cayenne
  • Salt and black pepper, to taste
  • 4 boneless, skinless chicken breasts
  • 2 Tbsp Extra Virgin Olive Oil

Directions:

  1. In small bowl, whisk together balsamic vinegar, maple syrup, mustard, garlic, thyme, cayenne and salt and pepper. Pour sauce into a large plastic baggy and add chicken breasts. (I like to pound out the chicken breasts to ensure they each have the same thickness so they cook evenly) Marinate the chicken for at least 30 minutes or even overnight.
  2. Heat olive oil in a large skillet over medium-high heat until oil shimmers, about 3 to 4 minutes. Using tongs, remove chicken breasts from baggy (leaving the marinade inside) and arrange in the pan. Allow chicken to cook for about 7 to 8 minutes, without moving, so a nice golden-brown crust forms. Flip chicken over and cook the other side for another 7 to 8 minutes. You’ll know the chicken is done when the juices run clear and the inside temp has reached 160 to 165 degrees.
  3. Remove chicken and place on a cutting board to rest then pour the remaining marinade into the heated skillet. Scrape up any brown bits and allow marinade to bubble up and cook, stirring occasionally.
  4. Add chicken back into the skillet, coating well. Serve and enjoy!
