Caramel Apple Crisp Is On The Dessert Menu Tonight!

  • PrintYou will never look at Apple Crisp quite the same way after trying this recipe…It’s scrumptious!

final crispCaramel Apple Crisp

A few years ago I created and posted this recipe…It’s become a fall favorite in our home…If you love caramel apples, and apple crisp, this is a must try recipe! I can’t wait to serve it for dessert tonight with a scoop of Vanilla Bean Gelato using apples from our dear friends Jeremy and Tanya Frost’s fruitful back yard Apple Tree! I have never seen a tree bearing 2 different verities of apples growing from a single tree trunk! Both the red Gala and yellow Golden Delicious tasted delicious! Jeremy held the ladder for me while I hand picked and filled 2 large bags last Saturday! The Frost’s apple tree was a magnificent sight in their yeard this year! Jeremy reported that this years harvest is the best in the past several years, and that this was the first year it beared two types of apples. Thank you for sharing your special tree with me, I’m having a great time in the kitchen whipping up our fall favorite confections and have also created a few new recipes that have been big hits!

Panko Encrusted Armadillo Eggs- Hells Yeah!

This is what they looked like before they hit the grill-

The recipe from Grillocracy

I substituted Jalapeno peppers for the hatch chiles and instead of trying to measure out the long list of spices I just scooped out a tub of jalapeno flavored cream cheese, dumped in a couple of handfuls of shredded cheddar and mixed in the rub that I had on my desk for the stuffing.  Way easier IMO.

The cooking instructions from the recipe were spot on, so follow those and you’ve got a simple killer game day appetizer. If this stiff can prepare them on his desk at the dock, you should be able to pull this off with ease.

The KENDALL HOTEL at the ENGINE 7 FIREHOUSE

Kendall Hotel Dalmation -2 ©Kim Smith 2015.jpgKendall Hotel -4 ©Kim Smith 2015.jpgLocated adjacent to MIT and with Google offices across the street, the Kendall Hotel is one of the few remaining historical buildings in technology-driven Kendall Square. Built in 1874, The Engine 7 Firehouse has been renovated with modern conveniences while beautifully preserving its authenticity and is replete with 19th-century inspired furnishings, American folk art, and complimentary breakfast “fit for a fireman.”

Thursday at the Kendall Hotel we installed custom-made planters with treillage to create a partially enclosed courtyard. We planted gorgeous mums in an array of fall colors; next to come is holiday decor (with lights!); and in the spring we’ll really make it sing. Stop by the whimsical and welcoming Kendall Hotel and have a look!

Or better even, plan to have lunch at the Hotel’s restaurant, the Black Sheep, where you’ll find delicious home-style classic American cuisine (with choices for meat-eaters and vegetarians) and all made from fresh, locally sourced organic ingredients.Kendall Hotel -3 ©Kim Smith 2015

“The artwork found throughout the hotel was carefully curated by owner Charlotte Forsythe, and includes some pieces by local artists commissioned specifically for The Kendall. Many items on display are an example of form and function, including a clock by Concord, MA artist Richard Dunbrack, which is comprised of “significant period artifacts and found objects.” A textile appliqué by Chris Roberts-Antieau, called “Circus,” is draped over the couch in the upper lobby where ceramic work by artist and owner, Charlotte, is also on display.

Pieces by American artists Richard Merkin and John Whipple hang in the upper lobby; Whipple’s technique of layering collage elements with charcoal and paint, yet letting the wood beneath show through, is reflective of the care and creativity that has helped revive the firehouse. Prints by Leonard Baskin and John Imber, both celebrated New England artists, can be found in the guest rooms. JJ Fandetti, the son of owners Charlotte and Gerald, also contributed several collage pieces, including his aptly named “Firehouse Machine.”

I know people get all horny for pumpkin flavored stuff. I’m not one of those people.

2015-09-03 09.19.46

Not sure what it is but just the thought of pumpkin coffee makes me queasy.  I know there’s tons that wait all year long for Dunks to bring back the Pumpkin coffee so this probably puts me on the outside looking in on the Pumpkin party.

Where do you fall on Pumpkin flavored coffee?

PEACHES RIPENING IN THE WARM SUN ~ DO I HEAR BELLINIS, ANYONE?

Today was simply a fabulous day, and it began very early with picking the first batch of ripe peaches from our peach tree. While washing the peaches, I turned to the large terrarium on our kitchen table and there were Monarchs galore beginning to emerge from their chrysalides. I had asked our gang of neighborhood kids if they would like to watch the butterflies as they emerge and help me with my film project and soon our home was filled with their wonderful selves. I’ll post the photos from our Monarch Day after the long weekend and don’t have time to get a new post together so here’s a favorite post from last year’s Schooner Festival/Labor Day weekend.belle-of-georgia-peach-c2a9kim-smith-2014-copy

Reblogged from Kim Smith Designs September 2014

Our ‘Belle of Georgia’ peach tree never disappoints. Each and every year without fail, and always around Labor Day, this semi-dwarf white-fleshed peach tree gives us mouth-watering sweet peaches. Not all of the peaches are perfect and the ones that are not eaten out of hand are whipped into smoothies, cooked in confections, or macerated with Prosecco.

Bellinis make a festive addition to your Labor Day/Schooner Festival weekend brunch or dinner, especially at this time of year when the farmer’s markets and grocer’s shelves are brimming with tree-ripened fresh fruit.

bellinis-from-our-peach-tree-c2a9kim-smith-2014~ Bellini Recipe ~

Marinate peeled, pitted, and sliced (halved or quartered) peaches in Prosecco for several hours. Just before serving, puree the peach-Prosecco mixture. Spoon the puree into champagne glasses, about 1/3 to 1/2 filled, and to taste. Gently add more Prosecco to the puree. Add a drop of raspberry liquor, Chambord, or a few fresh raspberries to the puree, to give the drink that beautiful pinky-peach glow.

Bellinis are traditionally made with white-flesh peaches such as ‘Belle of Georgia,’ but any variety of sweet peach will do.

In flower and in fruit, the peach is a pretty tree for your landscape ~

Read an excerpt about the ‘Belle of Georgia’ from my book Oh Garden of Fresh Possibilities ~ Notes from a Gloucester Garden here ~

Prunus persica ‘Belle of Georgia’

Cultivated by the Chinese for thousands of years, the peach tree is grown for its fruit as well as for its exquisite flowers and gracefully shaped branches. To better understand the significance of the peach tree in the Chinese culture it is worth noting that the development of the Chinese garden with its ying-yang symbolism was essentially Daoist in origin.

5:00AM 8/30/15 set up the smoker using the minion method.  Filled up the charcoal basket after placing four chucks of cherry in equal distances apart around the circle.  then took out the middle lump charcoal , got it going in the chimney and then once they were burning red I dumped them back into the center.  The idea is that the charcoal will slowly burn from the center outwards for a long low and slow session.

GOOD MORNING GLORIES BROUGHT TO YOU BY PLUM COVE GRIND!

Driving through Lanesville on my home from filming and the beautiful blue of ‘Flying Saucers’ caught my eye. I couldn’t resist taking a photo and circled back. Meredith Glaser, Plum Cove Grind proprietor, was just opening for the day and I couldn’t resist either her tempting blueberry oat scones. They were fantastic, chock full of blueberries and with a flaky texture, not at all glompy as is often the case with scones. Everything else on display looked very homemade and irresistibly delicious, too. I’ll definitely be back to sample more of Meredith’s yummy pastries.
