Spring Pasta with Grilled Chicken & Garlic Butter

Tis the season for baseball, soccer, lacrosse, tennis and all spring sports. Our Daylight ours may be getting longer but the amount of time to get dinner on the table seems to get shorter and shorter this time of year!  With that fact in mind, I thought I share my families new favorite Spring Pasta with Grilled Chicken & Garlic Butter recipe I developed earlier this week. It’s quick, easy, and tasty.  A perfect go to dinner idea for all busy parents rushing to get dinner on the table after the kids afternoon activities. It was a huge hit in our house, and made its way onto our dinner table two times this week!

Spring Pasta with Grilled Chicken & Garlic Butter

Ingredients

zest of one lemon

5 tablespoon minced garlic

juice of 2 lemon

2-4 boneless chicken breast; thinly sliced

1/2 teaspoon kosher salt; plus additional for seasoning chicken breast

1 teaspoon freshly ground pepper; plus additional for seasoning chicken breast

1 stick salted butter

1 lb. dried pasta; cooked Al’ Dente

3 large cloves garlic; finely minced

2 cups cherry tomatoes; cut in half

3 cups fresh baby arugula

1 1/4 cup freshly shaved Parmesan cheese

Step-by-Step

1  combine lemon zest, 2 tablespoon minced garlic, and lemon juice together; mix well; reserve chicken marinade

2  season sides of each chicken breasts with kosher salt and freshly ground pepper; marinate seasoned chicken breasts 15 minutes; flip chicken breast; marinate 10 additional minutes

3  grill chicken until its fully cooked; remove from grill; cover with aluminum foil; reserve

4 place cooked pasta in serving bowl; top with tomato, and arugula

5  melt butter over high heat in small fry pan; add 3 tablespoons minced garlic; and ½ teaspoon freshly ground pepper; sauté garlic 3-4 minutes; remove garlic butter from heat just before butter begins to brown

6  pour warm garlic butter over pasta, tomato, arugula; toss well

7  slice reserved grilled chicken into 1/2 inch strips; add 1/2 cup cheese, to serving bowl; toss

8 top with remaining shaved Parmesan cheese; serve immediately
