If you grew up in a Sicilian or Italian household or ever went to one at this time of year you may remember these treats. These are an Italian holiday treat that you can make ahead and leave in serving dishes around your house. The way that Felicia (Ciaramitaro) Mohan makes them, based on her Grandmother Felicia’s recipe, are little bites of fried dough slathered in a honey/Kayo syrup mixture and topped with bits of chocolate, toasted nuts and fresh cinnamon.

To Felicia Ciaramitaro Mohan this recipe is very special. Her uncle Charlie began making this recipe for her family many years ago.  It’s become a family tradition. Unfortunately Uncle Charlie passed away and will be sorely missed by everyone this Christmas and so this year this tradition has even more meaning to her family. “I know every family member will think of Uncle Charlie while enjoying every last clam.”

Sista Felicia’s Sugar Cranberries Recipe on The Gloucester Times Taste of The Times

To Felicia Mohan these sugared cranberries are something that she places along with nuts all around her holiday house. She says that they are “Where sweet meets tart, and a family favorite.”
The first thing you have to do is sort a bag of cranberries by removing any that are bruised or overripe, setting aside. Heat 2 cups of water and 2 cups of sugar to make a simple syrup. Place the cranberries in the heated syrup and place in the refrigerator overnight. The cranberries are going to become slightly soft and some may even split open.
The next day strain your cranberries and place them in a pie dish filled with superfine sugar and roll around until well covered. Remove them carefully with a wire mesh ladle so that you do not disturb them very much. The less you touch them the better they will look.

Kim Smith Makes Sista Felicia’s Pork Tenderloin (pics)

Kim writes-

Hi Felicia and Joey–I made your divine Pork Tenderloin with Fig sauce last night–my husband LOVED IT. Thank you!!! Served it with an herb couscous (using up remaining herbs from our garden-minced parsley, tarragon, and chives) and carmelized, pan-cooked sweet potatoes. All three recipes super, super easy and fun.

Quick question–the recipe says cook the pork for 25 minutes. I thought that seemed short for pork and had to cook ours for 45 minutes to reach an internal temperature of 160 degrees.

Also, was watching Julia Child on PBS Saturday afternoon while doing the dishes and was inspired to make her cheese souffle for dinner Saturday night. Came out perfectly and am inspired to experiment with adding fillings. Crab is a common filling–am thinking about trying lobster filling. What makes Julia so timeless is that she teaches technique–as do you!

Figs are used extensively in Mediterranean and Middle East cooking. You may have heard of Italian sweets such as Fig and Ricotta Tarts, Fig and Pistachio Biscotti and of course Italian Fig Cookies. But they are also used for more savory foods, such as this Pork Tenderloin marinated in an onion and fig mixture and then served over couscous with an onion and fresh fig sauce.
If you can get them, there is nothing quite like the unique taste and texture of a fresh fig. They can be eaten whole, skin, seeds and flesh. Since fresh figs are one of the most perishable fruits, they should be purchased only a day or two in advance of when you are planning on eating them. Look for figs that have a rich, deep color and are plump and tender, but not mushy. Ripe figs should be kept in the refrigerator where they will stay fresh for about two days. California figs are available from June through September; while some European varieties are available through autumn.

Gorgonzola is a favorite cheese to cook with or serve in many Italian homes. It is popular in risotto and on polenta but perhaps nothing is as popular as making this cream sauce and serving over pasta. This is one of Felicia Ciaramitaro Mohan’s favorite family recipes. Like many, she prefers serving over a short tubular pasta such as penne instead of something like spaghetti or linguine.

Gorgonzola is a blue cheese that originated in Italy sometime around 800 AD, having been originally made by hanging the cheese moulds in large caves to ripen. Today the cheese is manufactured by injecting the moulds right into the cheese as it begins to age. Traditionally, Gorgonzola is made with raw cow’s milk, although pasteurized and sheep’s milk versions of the cheese are also available. The greenish blue penicillin mould in the cheese imparts a very distinctive sharp and spicy smell that contrasts with the creamy white cheese surrounding it.

PP.S I don’t have a large bundt pan; your recipe made four smallish cakes: one small bundt, one heart-shape, and two very small loaf pans. I froze the two loaf cakes so the kids can take them back to school. And also added grated orange rind to the batter and chopped walnuts to the batter and frosting.

Grandma Felicia’s Apple Spice Cake Recipe From Sista Felicia

Grandma Felicia’s Apple Spice Cake

Ingredients:
3 Granny Smith apples
2 Macintosh apples
2 tablespoon cinnamon
1/2 teaspoon kosher salt
1 pinch ground clove
ÂĽ teaspoon nutmeg
ÂĽ teaspoon cardamom
2 Tablespoon vanilla
½ Tablespoon vanilla bean paste
1 cup white sugar
3 cups flour
1 cup dark brown sugar
1/3 cup orange juice
1 cup vegetable oil
1 ½ tablespoon baking powder
½ teaspoon baking soda
4 eggs
Recommended ingredients: use fresh apples from your local apple orchard.  I highly recommend taking some time out of your busy life and spend a few hours picking apples with your family and or friends. I promise ….It will make your life a little sweeter and the cake!

Icing ingredients:
3 cups confectionary sugar
1 teaspoon vanilla
3    tablespoon warm milk (add more or less milk to get desired icing thickness)
·    Combine all  ingredients in a bowl and whisk into a smooth and silky icing
Preheat oven 350 degrees
Step 1: using an apple cutter cut and core apples

Step 2: remove the skin with a pairing knife and cut into bite size pieces

Step3: place apples in a bowl and toss with 2 tablespoon of cinnamon and set aside

Step 4: in a separate bowl sift together all dry ingredients

Step 5:  using a handheld mixer or stand mixer set on a medium speed beat eggs 2 minutes then add oil, vanilla and orange juice and continue to mix for 1 additional minute

Step 6: on a lower speed carefully add dry ingredients

Step 7: continue mixing until all ingredients come together forming a smooth cake batter

Step 8:  fold apples into cake batter

Step 9: flour and grease bunt pan or spring form pan (Baker’s Joy is a must have in your pantry during baking season)

Step 10: add the cake batter to prepared pan and place on a foil or parchment paper lined cookie sheet

Step 11: bake for 1 hour 15 minutes or until a cake tester or wooden skewer is inserted and removed cleanly
Step 12: cool 10 min and remove cake from pan

Step 13: Drizzle with vanilla icing

It’s very simple, once you walk through downtown for the Block Party, swing on tdown to Lat 43 and the outdoor seating theatre which we will be creating in the parking lot facing Rogers Street.  If you can’t get a table downtown there will be plenty of hand food that you can grab and watch the free show and The Team at Lat 43 is offering food at family friendly prices-

Matt Burke From the Gloucester Daily Times Will be presenting  Awards To the top 25 Gloucester High School Gridiron Greats and we will have photos of lots of the award winners blown up 25 feet on the big screen as Matt gives out the awards.

We will unveil the 25 foot screen that Ed Collard and I conceived and Ed mostly built with help from Sista Felicia and screen Sam Hartson’s “This Is Fiesta” movie.  The Screen will be outside hoisted high up on the pilings in front of Lat 43, show footage of the blue lobsters albino lobsters, golden sea robin, Sunday Senior Seine Boat race, Friday Saturday and Sunday greasy pole footage, Monkey Balls, Craig Kimberly’s Fiesta Videos, Faces Of The Fishermen From EJ, Gloucester’s Finast Kind Calendar, and much much more.  The Outdoor cafĂ© setup in the parking area in front of Lat 43 will be incredibly set up Lat 43 will be practically giving the food away and there will be adult beverage service- NOT TO BE MISSED!!!!!

Best of all 10% of all food and beverage sales goes to GFAA to help rebuild Newell Stadium.
