Local Music Seen Christmas Special on Cape Ann TV

Those of you who missed the Cape Ann Solstice Concert at the UU Church Meetinghouse on Saturday will be able to catch much of it on Cape Ann TV in the next week or two.

And to get you in the mood, Cape Ann TV is reprising the original Local Music Seen Christmas special, that originally aired in 2011, tomorrow at 8AM and 11PM and on Christmas day at 5AM, 6PM and 10PM.  You’ll see many top local performers, some of whom were at the Cape Ann Solstice Concert — others who were not.  Here’s a taste:

Shrimp Cocktail & Cocktail Sauce

Shrimp & Cocktail Sauce

Ingredients

2 ½ lbs flash frozen 16/20 Cocktail Shrimp tail on (defrosted)

1 fresh bay leaf

½ lemon

Ice bath( in large mixing bowl, combine 8 cups ice cubes and 12 cups cold water)

Cocktail Sauce Ingredients

1 ½ -2 cups ketchup

2 heaping tablespoons horseradish ( sold in a jar in the refrigerated section of the grocery store)

juice of 1 lemon

Shrimp Step-Step

1 Bring 8-10 cups of water to rolling boil in large saucepan; add bay leaf,  and juice of ½ lemon; add the squeezed ½ to the pan of boiling water

3 add defrosted shrimp; cook 3-5 minutes until shrimp turn bright white and pink

Note~ shrimp will turn pink almost immediately when they touch the boiling water, allow them to cook until they turn opaque white & pink

4 remove shrimp lemon and bay leaf using a spider spatula; immediately place in ice bath 10 minutes

5 strain shrimp in large colander; transfer to airtight container; keep refrigerated until ready to serve

Cocktail Sauce Step-by-Step

1 combine all ingredients in mixing bowl; mix well; keep refrigerated in airtight container until ready to serve

2 transfer to serving bowl

Notes~

(1) If using a mariposa serving bowl, spray a light coat of kitchen spray in bowl before adding prepared sauce. This will protect the bowl from the acidity in the sauce, preventing Mariposa bowl from pitting

(2) The shrimp used in my photos were purchased from Stavis Seafoods in Boston (1-617-897-1220.) They are 16/20 white shrimp farmed in Indonesia.

Free Community Lung Cancer Screening

Initial Screening at Gloucester Police Department

January 6 and January 9th

Lung Cancer is the leading cause of cancer death for both men and women worldwide; however, it is currently the only one of the top four deadliest cancers (lung, prostate, breast and colorectal) that is not screened for routinely.
Based on the published findings of the National Lung Screening Trial (NLST), Addison Gilbert Hospital, a member of Lahey Health, now have confirmation that we can save lives of people at high risk for developing lung cancer through CT screening.
While private insurers and the Centers for Medicaid and Medicare Services (CMS) do not currently cover low-dose CT lung screening, and most hospitals charge a self-pay of at least $350 for this screen, Addison Gilbert Hospital is determined to help bring awareness and accessibility of this testing to all people at high-risk at no charge.
Addison Gilbert Hospital will offer a FREE low-dose chest CT screening to any individual who meets the established National Comprehensive Cancer Network (NCCN) high-risk criteria.  Persons between the ages of 50 and 74 who have
smoked at least an average of one pack per day for twenty years may meet these criteria and qualify for a free screening.

Super Fast Method to a Fresh Baked Home-Made Pie!

I don’t know where my brain is sometimes but this is the first year it occurred to me that pies can be prepared ahead of time and frozen, to be magically available when in a pinch! Over Thanksgiving I knew that this year I would be very pressed for time at Christmas.  I made several extra apple pies and rather than cooking, wrapped them tightly in foil, with a plastic bag around that, and stored them in the freezer. I had never frozen a pie before and wasn’t even sure if it was best to freeze cooked or uncooked.

Last night at dinner I was reminded by husband and kids of pies in the freezer. I pulled out an apple pie and placed it in the frig to defrost overnight. Several hours prior to baking I removed it from the refrigerator, which allowed it to reach room temperature. By the time it went in the oven this afternoon it was completely defrosted. Baked in a 375 degree oven for approximately 50 minutes, the pie cooked perfectly! Happy Husband, Happy Kids!

Everyone Was A Winner

at yesterday’s Season’s Best Cookie Competition and Solstice Party coordinated so exquisitely by Gigi Mederos and Stevie Black during the Rocky Neck Holiday Art & Fine Crafts Festival at the Cultural Center at Rocky Neck.  Attendees got to taste the incredible and diverse array of cookies entered into the competition, and enjoy the antics of the serious but fun loving panel of judges made up of Mayor Carolyn Kirk, Ed Collard and Sister Felicia.  Many attendees shopped and got to enjoy the wonderful selection of art and craft items available while checking some people off their lists.  The artists got to enjoy selling their creations and knowing that they have made some money this holiday season.  We got to enjoy the beautiful sound of Eva DiLascio’s singing group that unexpectedly appeared for an impromptu round of Christmas carols.  Mayor Kirk had fun on her birthday and went home with a beautiful birthday cake baked by Karen Tibbetts.  There were many new faces at the event, so the Cultural Center wins some new appreciators of the beauty of the space and the great things we have going on there.

The winners of the Season’s Best Cookie Competition (drum roll please) were:

2nd place Savory Cookie by Sydney and Kaleigh Cirafice

but all entrants were winners because they get to have a group cookie baking class with Sister Felicia!

The Holiday Festival is open today from noon to 4:00pm with the final weekend of the festival being held Saturday and Sunday, December 28 & 29 from noon to 4:00PM with a Pre New Years Party on the 29th from 2:00-4:00PM.
