What I learned in this cook was that no matter what, you have to be patient and wait for the brisket to be probe tender.
This Brisket reached 204 degrees internal but wasn’t probe tender, enetered a stall, temps retreated even with steady 250 degree pit temps all the way from 204 back down to 189. It wasn’t probe tender until it came back up to 195F.
Patience and understanding the stall paid off.

We took our visitors around on a recent foggy day to the Annisquam Lighthouse. It was pretty and sunny at the lighthouse but the fog lurked out there waiting…….. and it makes a subtle appearance as the lighthouse blared its warning.

It looks almost out of focus, but the fog gives it a nice soft look.

Guided autobiography is a fun and effective process for life review
that combines autobiographical writing with small group experiences.
Each week we will use prompting questions to jumpstart and organize our memories
around a meaningful life theme. The weekly sessions also provide a
safe space for sharing our work-in-progress, and participants will be
asked to share two pages that they wrote during the previous week.
Guided autobiography is especially powerful for those entering or
wanting to enter a new phase of life, but everyone can benefit.
This group will meet for ten Mondays Starting September 17 and ending on November 19 from 7-9 p.m. at the Maud / Olson Library at 108 East Main Street.
Class cost: $250
Minimum enrollment: 5
Maximum enrollment: 8
We had lunch at the “new” Pier 23 recently. Contrary to expectation, we each ordered a wrap. Stuffed with real chicken chunks, accompanied by strips of bacon….and the chipotle mayo was more chipotle than mayo which I loved. Friendly service, steady customer stream, varied menu…..we’ll be back!
