Another Apple Pie Alternative–Pastry Wrapped Cinnamon Baked Apples

Pastry Wrapped Apples

If you have an over abundance of apples from a trip to a local orchard or a good deal at the grocery store or farmstand, try these!  Not too many ingredients, easy to make and the kids will have fun making them too!  Took this photo before I put the toppings on (must have lost my mind for a second) but they are excellent and big enough to share.  Go crazy and put a little ice cream on them too!

Pastry Wrapped Baked Cinnamon Apples

2 teaspoons cinnamon
3 tablespoons granulated sugar
4 medium Cortland or other baking apples (about 3” diameter), peeled and cored
½ cup cinnamon flavored baking chips
2 tablespoons softened butter
1-15-oz. box refrigerated pie crust
2 tablespoons milk
½ cup caramel ice cream topping
¼ cup chopped pecans

Preheat oven to 350 degrees.   Line baking sheet with parchment paper and set aside.

In a small bowl, combine cinnamon and sugar.  Sprinkle mixture over peeled apples.

Cut both rolled pie crusts in half to make four portions.  On a lightly floured surface, roll each portion into a 9 to 10 inch circle and place on prepared baking sheet.  Place 1 tablespoon of cinnamon chips in center of dough and seat apple on top of chips.

Pour one tablespoon of the remaining chips into the center of each apple.  Press ½ tablespoon butter into chips.  Gather crust up around apples and pinch together at the top to seal.   Gently press any loose crust on to the apple.   Brush lightly with milk.

Bake apples in preheated oven for 45-50 minutes until apple is softened and crust is golden brown.

Remove apples from oven.  Drizzle with caramel topping.  Sprinkle with nuts and serve immediately.  Enjoy!

Weather puts haunting of wooded camp on hold

Old Red Eyes” has been spooked by the rain this weekend, but organizers for the benefit “haunted house” on the West Gloucester grounds of YMCA’s Camp Spindrift are sure he’ll be around beginning next Thursday.

Horribles Parade organizers have been planning to host a variation on the “haunted house” theme as a fundraiser for next year’s parade, and the presentation — based on the “Legend of Red Eyes” — was to have kicked off this weekend. But Al Kipp, one of the haunting’s organizers, said the event was postponed until next Thursday because of the grim weather forecast.

“It’s the trick-or-treat season, and I guess we just got tricked by Mother Nature,” Kipp said yesterday.

The “haunting” grounds will now open Thursday at 5 p.m. at the YMCA camp, with the showcase set to run Oct. 22 through 25, and Oct. 29 and 30 from 5 to 10 p.m. The haunted woods will also be open Halloween night from 5 to 9. Plus, each night will feature a special fright time for smaller children from 5 to 6:30, when the program will be geared toward them. Beginning at 7 p.m. each night, the haunting volunteers will “turn it up a notch” for older kids and adults, according to organizers Kipp and Dave Tucker.

Self-torture!

Why, oh why, do I do this to myself?? All I wanted to do was take the humidifier out of the closet and put it in the bedroom. Two hours later it’s still in the closet and to get to the computer, I had to climb over 2 boxes of old photos, a bin full of cassettes, a fan, the vacuum, and various storage thingies from under the bed. Whaaaaa???!! OVERKILL!!! And I get trapped into these huge projects when all I want to do is one little task. I know it’s my evil twin forcing me into subservient behavior. I would NOT do this willingly. Well, back to the mess. Oh, btw, I re-wired my speakers and re-installed the FM antenna on my receiver in the process. Yay!

Attention- Casting Call For Gorton’s Commercial This Saturday!

Gorton’s is pleased to announce that it will be shooting new TV commercials right here in Gloucester next month. In preparation for the shoot, Maura Tighe Casting will be holding an open casting call for extras this Saturday October 17. They’ll be looking for residents of Gloucester and surrounding towns (Rockport, Essex, Manchester by the Sea, etc.) to be extras in the commercials. They’re looking for people of all ages, from kids to older folks to everything in between – Moms and Dads, fishermen, teachers, doctors, chefs, grandpas, you name it! You don’t have to prepare anything or do anything special. Just come by and tell the casting agency a little about yourself and what you love about where you live. (And they’ll put you on tape when you are talking to them so they can remember who you are.) The open casting call is on Saturday October 17 from 10 AM to 4 PM at the Blackburn Performing Arts Center, located at 1 Washington Street (the corner of Main St. and Washington St) in Gloucester. The agency will take a picture of you when you get there, so don’t worry about bringing a picture. Just bring yourself (and a friend if you like). You may also see people from the production company around town over the next month preparing for the shoot and continuing to be on the lookout for potential extras.

Seasonal Flu Clinic Today- Get There!!!! 9-12AM

This year we will have two different sets of vaccines-Seasonal Flu Vaccine and H1N1 Flu Vaccine. The first two Seasonal Flu Clinic dates have been announced and H1N1 clinic dates will be announced soon.

Seasonal FluClick here for  Seasonal Flu Vaccine Clinic Dates.  Vaccination is recommended for all persons who wish to reduce the likelihood of their becoming ill with influenza or transmitting influenza to others should they become infected, however it is especially recommended for:

  • children 6 months – 18 years
  • persons with chronic health conditions
  • immuno-suppressed
  • individuals receiving long-term aspirin therapy
  • residents of long-term care facilities
  • pregnant women

It is important to note that while the seasonal influenza won’t protect you from the new H1N1 flu, it WILL protect you from the seasonal flu — which will likely be circulating at the same time that H1N1 flu is circulating. Initial shipments of seasonal flu vaccine will be targeted toward residents >65 years, pregnant women, and those with chronic health conditions. The Gloucester Health Department will hold two initial seasonal flu clinics on October 8th from 8am-1pm at the Rose Baker Senior Center and October 15th from 9-12 noon at the Fuller School.

Additional community clinics and school-based seasonal flu clinics will be announced as soon as the Health Department receives additional vaccine.

H1N1 Flu-The H1N1 vaccine will be available soon. Clinical trials have shown that one dose of H1N1 vaccine should produce immunity in adults. Children may require two doses of the H1N1 vaccine. The Centers for Disease Control state that there will be plenty of H1N1 vaccine for all who want it but the initial shipments should be prioritized for the following groups who have been shown to be at highest risk from complications of this novel flu virus:

  • Pregnant women
  • HH contacts/caregivers of infants < 6 m/o
  • HCP and EMS
  • Persons 6 mos – 24 yrs/old
  • HR persons 25 – 64 yrs/old

Once the H1N1 vaccine is received, Health Departments will partner with doctor’s offices, schools, and day care centers to make sure high risk individuals are offered the vaccine. In addition, large clinics will be held throughout Cape Ann for other eligible residents. Stay tuned to the city website http://www.ci.gloucester.ma.us for dates and times of scheduled seasonal flu clinics as well as H1N1 flu clinics. Contact the Health Department for more information (978) 281-9771 or call the Flu Information Hotline at 978-282-8080 for up to date flu clinic information.

Flu outbreaks evolve in unpredictable ways; it is impossible to know whether this outbreak will decrease, remain the same, or grow in coming weeks, and whether the illness will remain at its current severity which, on the whole has been relatively mild.

GMG Power Ranking Alternative

Since Joey has started the GMG Power Ranking, the candidates have been on edge. When will we fall from grace? How will we be able to live up to his unrealistic expectations? Will we have to walk the downtown street with GMG tattooed on our foreheads? Will we disgrace our industrious leader?

I shot these photos in RAW format and converted to HDR (High Dynamic Range). This was kind of a quick way as HDR is better with multiple exposures.
