Ohana’s Prix Fixe – Chef Enx lets his creativity shine through

Merriam-Webster defines Prix Fixe as “a complete meal offered at a fixed price.” Ohana defines Prix Fixe as “a delicious three course dinner with ever changing choices.” “The food is a delicious odyssey of tastes.”
In addition to popular regular items such as Mongolian Baby Back Ribs (indescribably good), Ohana Caesar Salad (a beautifully presented de-constructed salad) and Butterfish (Misoyaki marinated- seared and baked to perfection), Chef Enx creates new items on Ohana’s Prix Fixe menu. This menu changes regularly with choices of 5-6 appetizers, 4-5 main courses and 2 desserts.

What is the official State Ship of Massachusetts?
That’s a question the Al Bezanson sometimes asks friends sailing on his schooner Green Dragon. He’ll get answers like “Old Ironsides,” “Mayflower II,” or “Arabella.”
Wrong! The correct answer, as Al points out, is the Gloucester schooner Ernestina-Morrissey, originally the Effie M. Morrissey, built in Essex in 1893-94. In 1995 then-Governor Bill Weld named her the official vessel of the Commonwealth.
How did this little schooner qualify over all other contenders? Through a history of international outreach and service, nobly representing the maritime heritage of Massachusetts. She performed ably in hook-and-line fishing out of Gloucester that preserved fish stocks, in two decades of scientific expeditions to the Arctic Ocean, in wartime military missions, as a vital link between Cape Verde islanders and family members who had emigrated to New Bedford, and as an at-sea schoolhouse for educating thousands of Massachusetts school children in the wonders of their ocean environment. Nearly lost time and again, she is now undergoing complete restoration.
The story is told in Chester Brigham’s book Phoenix of the Seas, to be launched with a presentation and signing at the Cape Ann Museum on Saturday, June 13 at 3:00. Chet will also be introducing the book at the Essex Shipbuilding Museum on Wednesday, June 24 at 7:30.

Grilling Chicken Wings On the Smokey Joe Weber Grill

To prep for the grill:
Fill 2/3 of your Weber Rapid Fire Chimney with charcoal and put two sheets of newspaper crumpled up in the bottom of the chimney. Light the paper on fire and sit back for about 15 minutes to let the charcoal to get partly white.
Once your charcoal is ready dump the coals and arrange them on one half of the bottom of the grill to set up for indirect heat.
To prep the chicken wings:
Cut the little tiny wing tip of and then separate the drumette from the large part of the wing using either a large kitchen knife or a good set of kitchen shears. Lightly coat with your favorite chicken rub. I put my chicken parts into a tupperware like container, drizzled the rub over the chicken and gave it a light shake to coat them.
At this point they are ready for the grill. Arrange the drummettes with the thickest part on the half of the grill without coals under them but closest to the half of the grill that has the hot coals so they will get the most heat.then continue to arrange the chicken with the thinnest pieces placed further away from the side of the grill with the hot coals.
Place the grill cover on and choke down the top vent so that it is a little less than half way open to be sure to cook the chicken at a slow pace. After 20 minutes flip your chicken over, add a little seasoning if you’d like and cover it for another 20 minutes

This is after 20 minutes and just before the first flip-
After the second flip take the cover off and cook the wings on direct heat over the coals watching for flare-ups and crisping up the outside. This should be about 2 minutes on each side, directly over the coals.
The wings with nice little char marks and ready to come off the grill.

City’s Policy On Signs At The Rotary
Signs are permitted at the Grant Circle Rotary in the area adjacent to the “Welcome to Gloucester” Sign, with the following stipulations:
1. The sign must be for Gloucester community events only, not for business advertisements, or events in other communities. Signs for anything other than community events will be taken down.
2. Signs are only allowed with permission granted from the Director of Public Work’s office. Signs that are erected without permission will be taken down ,
3. Signs may only be erected one week prior to the event and must be taken down immediately following the event.

This isn’t really happening, right? This has to be an ice cream Kenny specifically bought for his dog. Like there’s no possible way he’s gonna take a lick of that ice cream right? Because I’m physically ill thinking about that possibility.
Making Atomic Buffalo Turds On The New Grill
I could eat these all day long. Caution: prepare yourself with lots of beer beforehand.
Chop off the top where the stem is and then cut your habanero peppers in half length wise. Then scoop out the stem and the seeds.
Then fill the habanero shells with cream cheese
Then cut store bought bacon in half and wrap the habaneros. If you have wooden toothpicks soak them in water for a half hour and stick them through to hold them together. I didn’t bother and was just careful when flipping them.
Hit ‘em with a dash of cajun spices
Place the coals on your grills on one side and cook the ABTs on indirect heat to avoid flare-ups. if cooking on a gas grill light one burner and place the ATBs on the opposite side of the grill.
Careful when turning to keep your bacon intact

STOK Stainless Steel Grilling Basket Insert Review

Last night I got to try out the new STOK Stainless Grilling Basket.
I can’t understand why 99% of veggie grilling trays or baskets have most of the area unexposed to the undersides, most have round holes but don’t allow the veggies to have the maximum amount of exposure to the smoke and or/heat.
I found a thin wire mesh basket for the gas grill and it works well but this stainless one is really well built. It just feels extremely solid.
After getting done seasoning and letting the steak tips get to room temp and preparing the Atomic Buffalo Turds it was time to try out our new grill accessory.


Then used the STOK Insert Removal Tool to take out the cast iron center insert and replace it with the Stainless Grilling Basket.
Took it out a couple of times and gave it a good wrist flip to rotate the veggies from the bottom of the unit to the top and it worked out flawlessly. It stayed securely together and the veggies came out just the way I like them, onions translucent and the peppers with a slight char to them. Opening it up by sliding the clasp back and used the tongs to flip the top section back.If I wanted less char I would have pushed my coals to the edges of the bottom of the grill and cooked using indirect heat but for the way I like my veggies this was perfect.

Attached are a few pics from the Gloucester Tourism Commission’s Lodging Tour organized by Carol Thistle, Kathie Gilson, Laura Baker of the Castle Manor Inn and Laura Dow of the Vista Motel. During the two day tour, nineteen properties were viewed! I am sorry I couldn’t include them all here, but I hope to include other tour highlights in future posts or other publications. The tour was primarily set up for the volunteers of the Stage Fort Park Welcoming Center who often assist tourists by making referrals to local inns and motels.

More hospitality workshops and tours are planned for both Stage Fort Park and Chamber of Commerce volunteers. Anyone in the tourism industry can join in for free. The next one is Thursday, June 11 at the Stage Fort Park Welcome Center from 6pm to 7pm. Steve Winslow, from the Community Development Department, City of Gloucester, will be giving a short talk about the best walking, hiking and biking trails in Gloucester.
