Carrot Cake Marmalade
This recipe was created several years ago to use up an abundance of carrots from my farm share at Applenton Farms. It has become a recipe I make through out the year. A jar of Carrot Cake Marmalade make a great hostess gift, and easy appetizer to assemble and serve to unexpected company! Carrot Cake Marmalade
Ingredients
3 cups shredded carrots
1 20 oz. can crushed pineapple and it’s natural juices
2 cup ripe Bartlett Pear; roughly chopped
3 tablespoons freshly squeezed lemon juice
1 teaspoon ground cinnamon
1 cinnamon stick
1/2 teaspoon ground nutmeg
4 cups granulated sugar
2 cups light brown sugar
1 tablespoon pure vanilla extract
1 heaping cup golden raisins
1/23 cup Malibu Caribbean Rum
1 1.75 ounce packet powdered fruit pectin
2/3 cup Flaked coconut
Step-by-Step
1 in large stockpot combine carrots, pineapple, pay her, lemon juice, cinnamon stick, ground cinnamon, ground nutmeg, granulated sugar, and light brown sugar together; stir continuously until mixture comes to rolling boil
2 reduce heat to medium simmer 20 minutes; stir often
3 add vanilla raisins and Caribbean Malibu Rum; mix well
4 add fruit pectin; mix well; increase heat to high setting; bring to rolling boil; boil one minute; Remove from heat
5 add shredded coconut; mix well; carefully remove cinnamon stick from hot marmalade
6 carefully ladle hot marmalade into approximately seven 1/2 pint size sterile mason jars; fix sterile lid and ring onto each jar
7 process jars in water bath 10 minutes; remove jars from water bath; cool over night
8 serve with Chevre cheese, lightly toasted Sourdough Bread, or plain cracker, and toasted pecans
* notes ~ processed mason jars will keep several months in cool pantry; marmalade will keep refrigerated 10 days in airtight container, unprocessed; also delicious served serve over warm Brie Cheese
