Coconut Is Free At Last!

A few days ago we were greeted at the door by a very proud Coconut sporting her “dangling” plastic cone.  God only know how she managed to wiggle it loose while we were out! After a few failed attempts, with the sad puppy eye stair down, the cone was successfully refastened around Coconuts neck for the remainder of her recommended recovery days post eye surgery, preformed by Dr. Ray Cahill at SeaPort Veterinary Hospital. Happy to report that our Coconut was finally freed from wearing the dreaded “hard plastic Cone” yesterday and tomorrow she will be off to K-9Kuts for a much need bath and day of beauty with Julie Borge!

Coconuts First Meal Post Surgery

Coconut rested peacefully after we finally decided to remove the hard plastic cone from her neck last night after several hours of whimpering caused by her frustration of being unable to get in a comfy position with it on. A friend hand delivered a soft inflatable cone after hearing about her discomfort, but that too was no go for Coconut.  As long as I am within reach and or in her sight she continues to rest comfortable by the fireplace and remains uninterested in the stiches in her right lower eyelid. Coconut seems more bothered by the hair shaved on her leg during surgery then her swollen eye. Dr. Ray Cahill continues to check in and warns to keep a close eye on her if she is without the protective cone. This afternoon I fixed her favorite lunch “Grilled Basil Chicken” with the hope that the smell of it cooking on the grill, would motivate her to leave her cozy spot by the fire and draw her over to my feet in the kitchen, where she usually sits when I’m cooking. My plan worked like a charm. Coconut perked right up and enjoyed every last piece.

Thank You Dr. Cahill from SeaPort Veterinary Hospital

This morning Coconut went in for a scheduled routine dental cleaning at SeaPort Veterinary Hospital. Just prior to her procedure, Dr. Cahill noticed a small growth on Coconuts right eyelid. He immediately recommend removal today while she was already under anesthesia for her teeth cleaning. It’s not easy turning your beloved pet over for surgery. The thought of her being sedated worried us all, but knowing she was under Dr. Ray Cahill’s incredible care we found comfort. He promised to keep an extra watchful eye because he knows how sensitive Coconut can be to medications. We knew he was keeping his promise after his sharp eye this morning detected the mass on Coconuts right eye lid during his throw per surgery exam.  We are truly grateful for Dr. Cahill’s loving care he and his staff showed to Coconut and to our family today. Coconut is home resting comfortably by the fireplace and is well on the road to recovery, with pearly white teeth!

Banana Split Scones

This morning I created this recipe for my daughter Amanda, who requested freshly baked scones for breakfast.  I thought I whip up a batch using slightly overripe strawberries, and extra coconut milk leftover from another recipe.  The results were great! The scones are light and fluffy, and not overly sweet.  Tuck this recipe into your recipe box…strawberry season is around the corner!

PrintscalDon’t you just love when inspiration strikes! Last week while shopping at Scalafini Bakery I noticed one of my favorite childhood Easter treats on the shelf for sale. The creative wheels in my head started turning and latter that afternoon I surprised my nieces and their friend Karlee Lorden with this Marshmallow Peeps Easter Egg Surprise! …And for the record it took 10 guesses before the girls guessed the correct filling inside the chocolate egg! They had a great time taking turns guessing during dinner time!

Coconuts Favorite Italian Dog Cookies (3)

I hope you didn’t think I was leaving out our beloved family dogs this seasons. Coconut AKA our family dog, loves a good cookie! A few years ago I searched for a dog cookies recipe that would please Coconuts Palate.  After trying several online recipes, that she turned her nose up to,  I decided to create my own, and included some of  Coconut’s most favorite foods and flavors, Cheese, Chicken, and Italian seasonings. She absolutely loves them and I have to quickly slip them into her airtight cookie jar to stop her from begging for more….I swear she is human…like us one cookie at a time is never enough! If you have a beloved pet in your home or family I highly recommend this recipe.

Coconut Woof’s You all A very Happy Holiday!

Coconut Loves Her Sunday Dinner

Christmas eight years ago, an elf dressed in traditional elf attire, holding a red velvet pocketbook, knocked at our backdoor with special delivery from Santa for a little girl named Amanda. After the screaming and yelling caused by the excitement of seeing an elf standing at the back door subsided, my stunned and in shock daughter raised her hand replying in her sweet raspy voice, “my name is Amanda.” The elf bent down eye level to Amanda carefully handed the red velvet bag to her. the elf explained that Mr. and Mrs. Claus wanted her to receive this very special Christmas gift one week early. Peeking out from the open end of the bag was a fluffy snow white fur ball with a little button nose. The look on our little girl’s face was priceless and that very moment is one our friends and family visiting that night will never forget. The elf quickly vanished into the dark of the night and from that point on our family life was forever changed. A note from Santa was attached to the bag explaining that Mrs. Claus had chosen to name this adorable snowball “Coconut.” Two hours later in the thick of celebrating my husbands birthday, Amanda tapped me on the shoulder and asked me, “Mommy where did this dog come from and who does it belong to?” It was at that moment we all realized that she truly was in shock and had no recollection of the elf knocking at the back door….A priceless Christmas story and moment in time my husband, family, friends, and I will never forget!
