I would bet Susan is right. The photo you have is an established growth. Japanese Knotweed or Chines Bamboo. Does it grow like crazy and you cannot kill it and it spreads all over the place? Hollow stems?
I hope you didn’t bet much. Will won the Green Thumb Award with his intimate knowledge of plant life, and immediate recognition of the mystery plant as a sweet potato. Either Will is a sweet potato farmer, or like myself, he just keeps his sweet potatoes until they start to sprout.
And Will is the winner of the Green Thumb Award! Yes, indeed, it is a sweet potato eye. I had never seen one before until the sweet potatoes I was saving for some future famine decided to sprout.
Before I put any cash down I visited a nice stand of Japanese knotweed this morning and did not come up with a match. A sweet potato? That is one weird looking plant. I may have to stick one in the dirt just to check it out.
You can just buy a sweet potato at MarketBasket and let it sit on your counter for a couple of weeks and sprout. Then you can check it out, plant it in the ground or just cook and eat it.

Only by mistake! I knew because we had some that sprouted and was remarking to my wife how colorful and beautiful the leaves were.

They are pretty amazing, aren’t they? I’ve seen tons of regular potato eyes in my lifetime, but sweet potato sprouts are pretty special.
