Domaine Seguinot 2021 Chardonnay, Chablis, France, Varietal: Chardonnay Alc., 12.5%
Daniel Seguinot settled in Chablis in 1971, and with help from his father and grandfather, he purchased a modest 2 hectares of vineyards. Since then Daniel has a total of 20 hectares exclusively in the Chablis AOC. Today his two children Emilie, who took over in 2003, and Laurence who joined in 2008 manage the estate. The domain is located in Maligny, 8 km north of Chablis, on the North-South main road of the Serein valley. The Seguinot Chardonnay has an elegant bouquet that develops citrus, white fruit and floral aromas with exposure in the glass. Fresh and supple, the wine is marked by mineral notes that are typical of the appellation. Pairs well with oysters, seafood, grilled fish, or a variety of lighter fare. $25.99
Monget Giennois, Loire Valley, France
Varietal: Sauvignon Blanc Alc. 12.5%
Following the completion of his academic studies in agricultural engineering, Christophe Monget began his career in the Bordeaux wine sector before proceeding to Champagne, ultimately landing in Centre-Loire as technical manager of quality Sauvignon seedlings. He was inspired to delve into winemaking and has been an integral member of the team behind the venerable Domaine de Villargeau (Coteaux du Giennois) as well as producing his own wine under the Christophe Monget Vigneron label. For this, his own label, Christophe and his cousin manage 23 hectares of family vineyards about 50 km north of Pouilly Fumé that were once planted with grains and grazed by cattle. With a passion for wine and polycultural farming, Christophe dedicated the entire property and historic 300-year-old stone barns to grape growing and winemaking. His farming philosophy is a commitment to organic and natural practices, and the domain is a member of Terra Vitis. On the palate, this wine’s vibrant citrus flavors take the spotlight, maintaining a harmonious and refined character that extends to the long, mineral-driven finish. Pairs well with pan-roasted salmon or a refreshing appetizer of fresh cantaloupe wrapped in prosciutto. $21.99
Maison Guillot-Broux 2021 Pinot Noir, Burgundy, France
Varietal: Pinot Noir Alc. 13.5%
Established in the early 1950s by Pierre and Jeannine Guillot, the husband-and-wife team worked land that had lain fallow and been abandoned for 100 years due to the phylloxera outbreak of the mid-1800s which swept the region. Owing to this benign neglect, the Guillots were able to own and farm sites that had never been treated with industrial chemicals. Pierre and Jeannine’s son Jean-Gerard took over the family operation in 1978 with his wife, Jacqueline Broux, creating the domaine Guillot-Broux. Today, the 17 hectare estate is run by the third generation brothers Emmanuel and Patrice. Emmanuel is the head winemaker, a position he returned to in 2000 after a distinguished career as a Sommelier in the UK at the Michelin starred L’Ortolan in Reading, Berkshire, and Patrice manages the domain’s vineyards. In recent years, weather conditions have often led to lower yields than planned, causing an economic burden for the domain. In order to find a solution to this situation, the domain set up the négociant house, Maison Guillot-Broux in 2014. For the wines under the Maison label, all the partner winegrowers are either certified organic or converting to organic agriculture. To guarantee the quality of Maison-labeled wines, the domain selects each individual vineyard they harvest. In addition, Guillot-Broux harvests the grapes themselves and vinifies at their domain, using the same methods as for their domain wines, i.e. no added yeast and minimal use of sulfites. This Maison Guillot-Broux Pinot Noir is a gorgeous expression of French terroir. It is juicy and opulent with notes of cherries and blueberries on the nose and palate. Pairs well with salmon, roast chicken, goat gouda. $19.99
Illahe Pinot Noir, Willamette Valley, Oregon
Varietal: Pinot Noir Alc. 14%
Home of some of the most elegant and expressive Pinot Noir in the world, the Willamette Valley is a mixed landscape of green, rolling hills, dramatic forestlands and small, independent, wine growers. As a leader in environmental stewardship, the valley has some of the nation’s most protective land use policies, with two-thirds of its vineyards farmed sustainably and over half, organically. At Illahe, in addition to using draft horses to plow and to transport the grapes, they use solar power and the winery buildings are gravity-flow, featuring three levels, and using the natural slope of the site, starting from the crush pad to the fermenters and the press below. A further drop-off from the fermentation room to the press level means the press baskets can be loaded by hand. The care that is taken with the land and the grapes shows in the wine. The Pinot Noir has aromas of ripe plum, nutmeg, cigar box, and vanilla bean. The fruit on the palate — cherry torte, tamarind paste, strawberry jam, anise – along with nutmeg and cinnamon spice, help develop a balanced and weighted mouth feel with good acidity and smooth, lingering tannins. Pairs well with grilled salmon, coq au vin, mushroom pasta. $31.99
Unculin, Bierzo, Spain,
Varietal: Mencia Alc. 13%
Jose Antonio García and his wife Julia Peña García are at the forefront of the next-generation of vignerons in Bierzo. Jose spent his formative years in Barcelona where he worked in restaurants and gained valuable perspective and experience with fine wine. In 2009, Jose returned to recuperate his family’s 22 hectare vineyard holdings in the tiny village of Valtuille de Abajo, which is also home to his friend and former mentor Raúl Pérez, where Jose made wine following enology school. All the work in the vineyard and winery are manual, with minimal intervention and input. The vineyards are farmed organically (notably they use the plentiful bounty of local walnut shells as fertilizer in the vineyard) with indigenous yeasts fermentations and minimal SO2 before bottling. A perfumed, floral nose opens up to a medium-bodied red, velvety and balanced, showcasing juicy red cherry and plum fruits. The finish is fresh, persistent, and satisfying. Pairs well with chorizo, paella with duck or rabbit, bacalao. $21.99

The Sawyer Free Library is pleased to host local author Aime Alley Card on Thursday, March 7 from 5:30 to 6:30 p.m. She will be discussing her book The Tigerbelles: Olympic Legends from Tennessee State. Joining her in the conversation will be fellow author, Jean Duffy, author of Soccer Grannies: The South African Women Who Inspire the World.
The Tigerbelles: Olympic Legends from Tennessee State chronicles the 1960 Tennessee State University all-Black women’s track team, which found Olympic glory at the 1960 games in Rome. It is an epic story of desire, success, and failure—of beating the odds—against the backdrop of a changing America.
Published this month to coincide with Women’s History Month in March, the author, who lives in Wenham, will speak as part of the Sawyer Free Library’s author event series from 5:30 to 6:30 p.m. Thursday, March 7, at the library, 21 Main Street (upstairs) in Gloucester. There will be books available for to sign. No registration required.
Tigerbelles is a multi-layered inspirational tale of triumph over adversity. The elite group of talent includes Wilma Rudolph, Barbara Jones, Lucinda Williams, Martha Hudson, Willye B. White, and Shirley Crowder. These are women who once were and should still be known worldwide. Ultimately, the team’s drive is for more than medals. Their coach, Edward Temple, and the Tigerbelles offer a challenge to the world’s perception of what a group of young Black women in the Jim Crow South are capable of.

For the past several years, Aime Alley Card has been researching, interviewing, and writing about the Tennessee State Tigerbelles and those who supported them along their path. She conducted and reviewed hundreds of hours of interviews and read just as many books and articles, ranging from concurrent to retrospective. She is a nonfiction editor for Pangyrus literary magazine and a board member for the Women’s National Book Association, Boston Chapter, and serves on her town’s cultural council supporting educational programs.

Mayor Greg Verga is proud to announce the award of $100,000 to Gloucester Marine Genomics Institute (GMGI), one of eight community organizations receiving Covid Local Fiscal Recovery Funds, to support the buildout of new office space for teachers and support staff.
The City of Gloucester was awarded $23 million under the American Rescue Plan Act’s local funding provisions and has been distributing these funds to several sectors within the community. Mayor Verga recently announced the appropriation of $870,170 of Covid Local Fiscal Recovery Funds, also known as ARPA funds, to be distributed to eight community organizations. This funding will be used to support their critical missions within our community and to aid in their work to assist in the City’s recovery from the impacts of the COVID-19 pandemic.
“Gloucester Marine Genomics Institute has leveraged our community’s unique location and potential to create opportunities for our young adults through their innovative Gloucester Biotechnology Academy,” said Mayor Greg Verga. “I am thrilled that we have been able to offer support to GMGI for the expansion of their space to allow their administrative staff and instructors the room to grow and thrive. I look forward to seeing all that they will continue to do in our great City.”
After substantial public input and a careful application process, GMGI was awarded funds to support the addition of new office space that provides Gloucester Biotechnology Academy instructors and administrative staff with 2,800 sq. ft. of shared and individual offices as well as private breakout rooms.
“The recent success of the Academy has provided tremendous outcomes for our students but has also required an expansion across all areas of our program,” said Chris Bolzan, GMGI’s Executive Director. “This generous support from the city allows our team to do their jobs with professionalism, efficiency, and confidentiality, all the while catalyzing the local economy through the use of local contractors and providing career development for Gloucester’s young adults.”
In addition to this nearly $900,000 for community organizations, Mayor Verga has also strategically allocated $13 million to support critical infrastructure upgrades, $1.5 million to the City of Gloucester’s Affordable Housing Trust, and $1.5 million to fund several economic development initiatives.

I broke down some Skin on bone in chicken thighs (my favorite part of the bird to eat) to see how much it costs if you just use the meat. You could use the bones and skin for stock and other things but for this purpose I’m just concentrating on the meat.
I’m not gonna go crazy trying to get every last scrap of meat off the bones, just a simple cutting out of the bone and taking off the skin. Speed, not yield.
First off, the tag-

4.41 lbs @ $1.29/lb= $5.69




$5.69 divided by 2.22 lbs of meat yield=$2.56 per lb of meat.
Much cheaper than boneless skinless thighs or breasts purchased.
