Pork Loin On the Grill

At the supermarket picking up some stuff for last night’s dinner and figure I’d pick up some pork for smoking today at the dock so I could treat the boys to some pulled pork sandwiches.
Saw the small 2 lb pork loin and didn’t think it all teh way through on how lean a pork loin is and devoid of all that good fat for smoking.
So the plan has changed up and after reading a bunch on the BBQ forum the new plan of attack is to cook it on the kettle between between 325-350 indirect heat and pull it off when it reaches 140 internal.
I trimmed the thick part of the fat off the top and left about half of the fat on.  Then made some criss-cross incisions on the top.
Next applied the Paul Prudhomme’s Blackened redfish magic rub.

It was busy down the dock and I dumped a full chimney of coals on one side of the kettle, it got going and ended up needing to be have the vents choked down completely for a good twenty minutes to get the heat to settle down under 350.

Also we had a run of lobster boats land in sequence so I couldn’t monitor the internal temps as i would have liked to.  By the time I put the lobsters crated up and into the tanks the internal temp on the pork had gone to 160.  I figured it was just a total disaster as the original plan was to pull it off around 130 internal.

As it turns out I let it rest for about a half hour and we sliced it up for some sandwiches.  used some nice potato rolls and tried out Trader Joe’s Carolina Gold BBQ sauce.

It was actually quite tasty and not dry at all.
So it wasn’t my proudest moment at the kettle, but in the end the boys all enjoyed it.

October Artists of the Month at Rose Baker

Watercolor artists Ed Leavitt (pictured with some of his works) and Doreen Ross are the October artists of the month at the Rose Baker Senior Center. Each month Juni Van Dyke, Director of the Art Program at the Senior Center selects one or two artists to honor with a show of their works. The works are displayed in the main lobby of the Senior Center and can be viewed weekdays from 9am to 4pm. On Thursdays, the artists will be available to answer questions and talk about their works.

Thanksgiving Break Pop Up Art Fair UPDATE Gloucester’s inaugural younger artist fair

Since the first announcement, we now have 10 younger Gloucester artists signed up for the inaugural Thanksgiving Break POP UP ART FAIR on November 28, 2015 at the Hive from 4-8pm.

So far that’s representation from GHS alumni years 2006, 2007, 2011, 2012, and 2015. Pretty good so far!

We hope more artists will sign up and can’t wait to see what they do. Spread the word! Contact Pauline at paulinebresnahan@hotmail.com to add your name to the growing list of exhibitors. POP UP fair update Oct 11 2015

You thought you didn’t like brussel sprouts til you roasted them on the @STOKGrills Charcoal Drum Using Their wok insert

I never thought I liked brussel sprouts but we were doing mushroom swiss burgers with sauteed onions and I was looking for a side.  At Stop and Shop in East Gloucester they had brussel sprouts on sale for $2 a bag so I figured I could do something with them on the grill.

I never thought I’d have such a passion for BBQ Charcoal grilling but this grill with all the different inserts and the cast iron grates and the ash catching system at the bottom and the figuring out how to arrange your coals, it’s just straight up addicting. The process just takes you away and while I can’t imagine why some people like to golf, I imagine it’s the same type of thing- that you immerse yourself in the process and the stresses of every day life go away because you need to be focused.   It’s been a joy and the thing that takes the STOK grill system to the next level is all the cool inserts that you can use to try different types of cooking with wood chunks, chips and/or charcoal.

Anyway, preparing and roasting the brussel sprouts couldn’t be easier. 

You wash them under cold water and dry them, cut them in half length-wise drizzle them with Atlantic Saltworks coarse salt, crushed black pepper and some garlic powder and place them cut side down on the wok insert or if you don’t have the wok insert , a good seasoned cast iron pan will do.  Get the grill up to 400 degrees and move them around a little as you cook.   About 15 minutes and they’ll bring out that sweet caramelizing  from the heat.   If you didn’t think you liked brussel sprouts, you really ought to give them a try this way.

Where the Sidewalk Begins- Walk this way again Railroad Ave

Hi Joey,

A sidewalk returns to Railroad Avenue. Some call it place making or Smart Growth. I say sometimes it’s nice to turn back time. Look at the old postcard image. We are lucky to have some of the same wide streets. Clean sidewalks – they’re great for residents. Great for commuters. Easier for families. Thank you DPW! It looks beautiful. I hope it inspires Shaws to match it up on the other side.

Bonus: It’s easier than ever to #strideby the Jeff Weaver mural at Ben’s Wallpaper and Paint and have a closer look. That mural changes now and again.

Twice Grilled Potatoes

Cover russet potatoes with olive oil and sprinkle top with Atlantic Saltworks Salt Flake.  Put on grill for about an hour, vents wide open.

 

Hollow out the potatoes once soft put soft potatoes guts aside.

Mix up equal parts shredded cheddar and cream cheese and butter and add just a touch of your favorite BBQ rub for color and a little kick.  Then add your potato guts and some chopped up cooked bacon and restuff the hollowed out potatoes.

Toss em on the grill before your steaks to get that cheesy goodness to melt all throughout the potato.

Once you got meltage, you’re good, time to eat!
