Fall Risotto

risotto 3

Risotto is a rice dish that is cooked in a broth until the starches from the rice transform into a creamy dish. The arborio rice is a delicious base for a variety of flavors.

This fall inspired risotto combines the sweetness of butternut squash with a pleasing bitter from thyme and sage. The slightly charred mushrooms make this dish a showstopper.

This can be a hearty main dish or a colorful side. Serve with chopped pecans, pumpkin seeds, or dried cranberries.

Meet the “Roboat II,” the second iteration of an autonomous boat developed by researchers at MIT’s Computer Science and Artificial Intelligence Laboratory (CSAIL) and the Amsterdam Institute for Advanced Metropolitan Solutions.

The first Roboat floated onto the scene four years ago — a smaller version of the new Roboat II that MIT CSAIL announced on Monday. The team is now working on another, even larger vessel with the aim of carrying four to six people.
